Haven't tried this yet as I just received it in a Delight Dish e-mail.
6 ears sweet corn (cut corn from cobs)
4 small zucchini, sliced thin
1 can diced green chilies
1 small yellow onion, diced
2 Tbsp minced garlic
4 Tbsp butter
2 Tbsp ground cumin (I'm not crazy about cumin)
1 Tbsp red chili flakes
S&P to taste
Saute onions and garlic in butter until transparent. Add green chilies and zucchini and cook for 15 minutes (seem a bit long to me). Then add corn and spices and cook for 10 more minutes until corn is completely heated.
Serve warm.
