                               CHEDDAR POTATO CHOWDER
 
PREP TIME: 20 MINUTES                             COOKING TIME: 20 MINUTES
 
2 CUPS OF WATER
2 CUPS DICED  POTATOES
1 CUP DICED CARRTOS
1/2 CUP CHOPPED CELERY
1/4 CUP CHOPPED ONION
1/4 TSP SALT
1/4 TSP PEPPER
 
1/4 CUP ALL-PURPOSE FLOUR
2 CUPS 2% MILK
2 CUPS (8 OZ) CHEDDAR CHEESE (REDUCED FAT)
1 CUP CUBED FULLY COOKED LEAN HAM ( CUBED HAM IN  SMALL PACKAGES IN THE MEAT SECTION )
 
IN DUTCH OVEN (OR LARGE POT) COMBINE THE FIRST 7     INGREDIENTS
BRING TO BOIL
REDUCE HEAT
COVER AND SIMMER FOR 10-12 MINUTES OR UNTILO TENDER
 
MEANWHILE, PLACE FLOUR IN A LARGE SAUCE  PAN
GRADUALLY WHISK IN MILK
BRING TO BOIL OVER MEDIUM HEAT
COOK AND STIR FOR 2 MINUTES OR UNTIL THICKENED
REMOVE FROM HEAT
ADD CHEESE
STIR UNTIL CHEESE IS MELTED
 
STIR IN HAM AND CHEESE SAUCE INTO UNDRAINED VEGETABLES
STIR UNTIL COMBINED
 
YIELDS 7 SERVINGS
1 SERVING = 212 CALORIES
2 GRAMS FIBER: 9 GRAMS FAT: 847 MG SALT: 18 GRAMS CARBOHYDRATE: 16 GRAMS PROTEIN.

I love potato soup, any time of the year. Those carrots are over powering, though. Have to leave those nasty suckers out of there.

sammichlady:  Didn't your mother ever tell you that carrots are good for your eyes and vision.  Leave the carrots out  of the potato chowder and you will probably go blind !

They tell me a lot of other things make your eyes go bad, but I don't see it. LOL!!!  ( On the other hand, my arms aren't quite as long as they used to be)
