~Forget about Cookies~ The "forget about" part of the name refers to the fact that the cookies are left overnight in an oven that has been preheated and then turned off. Once you taste these crunchy, chewy little delights I doubt you'll forget them.
Forget About Cookies
2 eggs whites, beaten until stiff 2/3 cup (160 ml) sugar 1/4 tsp (1 ml) salt 1 cup (250 ml) semi-sweet chocolate chips 1/2 cup (125 ml) chopped walnuts, pecans, or nuts of your choice
Add the sugar to the beaten egg whites gradually, beating constantly. Add the salt. Fold in the chocolate chips and chopped nuts. Drop by tablespoonfuls (15 ml) onto lightly greased baking sheets - they will not spread, so can be placed close together. Put in a preheated 350F (180C) oven and immediately turn the oven off. Let the cookies sit in the oven overnight. Makes about 2 dozen.
