I took an apple cooking class last week. I made it for my husband this morning and I used a round bunt pan instead of a loaf pan and it turned out perfectly sized pieces when I cut it. I also made it with just the bread and sprinkled a little powdered sugar on it and sent that with him to work the other day. His coworkers really enjoyed that and it took out half the steps! :) t looks more complicated than it is - the chopping of the apple took the longest.
Bread: 1 cup flour 1/2 cup sugar 1 tsp. salt 1 1/2 tsp. baking powder 1/3 cup milk 1 egg 1 cup finely chopped apple cinnamon sugar mix as needed
Icing: 1/2 cup confectioners sugar milk, as needed
French toast dip: 5 eggs 2 Tbsp. milk 1/2 tsp. vanilla 1/4 tsp. cinnamon 1 Tbsp. sugar
clarified butter, as needed
whipped cream, for service maple syrup, for service
Procedures:
-In a large bowl mix together flour, sugar, salt, and baking powder. Add milk and egg and beat until batter is smooth. Fold in chopped apple. -Scoop batter with ice cream scoob and roll in cinnamon sugar mix. Drop into the bottom of a greased loaf pan. Repeat for remaining batter. Bake loaf in a 350F degree oven until a skewer comes out clean, about 30 minutes. Let rest. -In a small bowl, mix together confectioners sugar with enough milk to make an icing. Drizzle icing on top of cooled bread. -Slice bread into thick slices. -In a medium bowl, whisk together the egg, milk, vanilla, cinnamon, and sugar. The egg should not stick to the whisk in a glob - if it does, whisk more. -Preheat large saute pan or skillet on high heat until hot. Add enough clarified butter to lightly coat the bottom of the pan. Dip each slice of bread into the egg batter and cook in the skillet until golden brown on both slides and cooked throughout. -Serve with whipped cream and maple syrup. |
