Recipes : PERFECT WINTER BEEF STEW

WE ARE PREDICTED TO GET 4-5 INCHES OF SNOW OVER NIGHT. THOUGHT THIS WOULD BE APPROPRIATE.
 
                          PERFECT WINTER BEEF STEW
prep. 15 minutes           total:2 hrs. 15 min. (including marinating)
 
3/4 cup kraft zesty italian dressing
2 lb. beef for sfew, such as beef chuck roast, cut into 1-inch cubes.
6 slices bacon chopped.
3 cups mushrooms
1 cup chopped onions (about 1 large).
3 cups sliced carrots(about 6 medium).
1 1/2 lbs. potatoes,cut into large chunks (about 6 cups).
1 can (14 1/2 oz) stewed tomatoes, undrained.
1 can (14 1/2 oz) beef broth.
 
POUR dressing over meat in a resealable plastic baggie. Seal bag; turn to evenly coat meat with the dressing. Refrigerate 30 minutes to marinate. Meanwhile, cook bacon in large sauce pan on medium heat 5 minutes. or until crisp, stirring occasionally. Remove bacon from pan; drain drippings.
ADD  mushrooms and onions to same saucepan; cook on medium heat 10 min, or until tender, stirring occasionally. REMOVE meat from from marinade, discard marinade.  Add meat, carrots, potatoes, tomatoes, broth and bacon to sauce pan; stir. BRING to boil, stirring doccasionally, reduce heat to  low; cover adn simmer for
1 hr. 15 min. or until meat is cooked through and sauce is thickened, stirring dodcccasionally.
MAKES 8 servings, 1 1/2 cups each.
 
* It took me longer to type this than to do the prep work*  you can also use a crock pot to make this.  Do the bacon, onions and mushrooms and then put every thing in the crock pot. dcookd it for6-8 hours on high for 1-hrd. and then turn to low for the rest of the time.  Hope you enjoy this as much as my wife and I did.
