1/4 Cup vegetable Oil
1 pound round steak, cut into 4 pieces
pinch of salt
dash of pepper
1 egg, beaten
2 cups milk
1 cup flour
 
 
Heat oil in heavy iron skillet.  Use meat mallet to pound out the meat.  Season the steak with salt and pepper.  Combine egg with approximately 3 tablespoons of milk  in bowl.  Sift flour into shallow pan / plate, dredge steak in flour, coating each piece evenly.  Drip steak into eagg mixture, then dredge in four again.  Fry steak in hot oil until golen brown (about 3 minutes on each side).  Remove and drain on paper towels.  Use remaining flour (usually about 3 tablespoons) and milk to make gravy.  Great with mashed potatoes and green beans.
