BEEFY TOSTADA PIES

2 tsp olive oil 2 cloves garlic, minced

1 1/2 cups chopped onion 1 can ( 15 oz.) tomato sauce

2 lbs ground beef 1 cup sliced black olives

1 tsp chili powder 8 flour tortillas

1 tsp ground cumin 4 cups shredded cheddar cheese

1 tsp salt sour cream, salsa, green onion

Heat oil in large skillet over medium heat. Add onions and cook until tender. Add ground beef, chili powder, cumin, salt, and garlic. Cook until browned. Stir in tomato sauce; heat through, stir in olives.

Make foil handles using three 18 by 2-inch strips of heavy foil. Crisscross foil to make spokes design. Place in slow cooker. Lay one tortilla on foil strips. Spread with meat sauce, and layer of cheese. Top with another tortilla, meat sauce and cheese. repeat layers, ending with cheese. Cover and cook on HIGH 1 1/2 hours. To serve, lift out of slow cooker using foil handles and transfer to serving platter. Discard foil. Cut into wedges. Serve with sour cream, salsa, and chopped green onions if desired.

Makes 4 or 5 servings.

CHICKEN STEW WITH DUMPLINGS

2 cups sliced carrots

1 cup chopped onion

1 large green pepper, sliced

1/2 cup celery

2 cans (14oz each) chicken broth

2/3 cup all purpose flour

1 lb boneless, skinless chicken breast, cut into 1-inch pieces

1 large potato, unpeeled and cut into 1-inch pieces

6 ounces mushrooms. halved

3/4 cup frozen peas

1tsp dried basil

3/4 tsp dried rosemary

1/4 tsp dried tarragon

3/4 tsp salt

1/4 tsp pepper

1/4 cup heavy cream

HERB DUMPLINGS

1 cup biscuit mix

1/4 tsp dried basil

1/4 tsp dried rosemary

1/8 tsp dried tarragon

1/3 cup milk

For stew, combine carrots, onion, bell pepper and celery in slow cooker. Stir in chicken broth, reserving 1cup broth. Cover and cook and LOW for 2 hours.

Stir flour into remaining 1 cup broth until smooth. Stir into slow cooker. Add chicken, potato, mushrooms, peas, basil, rosemary, and tarragon to slow cooker. Cover and cook 4 hours or until vegetables are tender and chicken is no longer pink. Stir in salt, black pepper, and heavy cream.

For biscuits, combine biscuit mix, and herbs in small bowl. Stir in milk to form soft dough. Spoon dumpling mixture on top of stew in 4 large spoonfuls. Cook, uncovered, 30 minutes. Cover and cook 30 to 45 minutes or until dumplings are firm and toothpick inserted in center comes out clean. Serve in shallow bowls.

Makes 4 servings.

Slow Cooker Beef Stroganoff
 Prep Time: approx. 29 Minutes. Cook Time: approx. 8 Hours .
 <o:p></o:p>


1-1/2 pounds top round steak,
   cut into strips
salt and pepper to taste
1/2 onion, chopped
1 (10.75 ounce) can
   condensed cream of mushroom soup
1 (8 ounce) can canned mushrooms
1 tablespoon dried chives

1 cube beef bouillon
1/4 cup white wine
1 tablespoon all-purpose flour
1/4 cup water
1 clove garlic, minced
1 teaspoon Worcestershire sauce
14 ounces sour cream
1/2 cup chopped fresh parsley


Directions
1 Place the beef in the bottom of a slow cooker and
   season with salt and pepper to taste. Than add the onion,
   soup, mushrooms, chives and bouillon.
2 In a separate small bowl, combine the wine with the
   flour. mix well and add to the slow cooker. Then add the
   water, garlic and Worcestershire sauce.
3 Cook on low setting for 7 to 8 hours.
4 One hour before serving, stir in the sour cream and the parsley

Slow Cooker Chicken Continental
 Prep Time: approx.  20 Minutes. Cook Time: approx. 8 Hours . <o:p></o:p>


2 (8 ounce) pkgs dried beef<o:p></o:p>

6 slices cooked bacon, crumbled
6 skinless, boneless
   chicken breast halves<o:p></o:p>

Salt and Pepper to taste

1 onion sliced <o:p></o:p>

1 cup sour cream <o:p></o:p>

1 (10.75 ounce) can
   condensed cream of mushroom soup
1/4 cup all-purpose flour


Directions
1 Lightly grease slow cooker with bacon grease and line with <o:p></o:p>

   1 package of dried beef and half of the bacon pieces.  <o:p></o:p>

   Place 2 to 3 chicken breasts in slow cooker, salt and pepper<o:p></o:p>

   to taste, top with half of the onion slices. Combine sour cream, <o:p></o:p>

   soup and flour in a medium bowl and mix together; pour 1/2 of <o:p></o:p>

   mixture over chicken. Repeat the above for the second layer. 
2 Cook in slow cooker on Low for 8 hours, or on High for 4 hours

CROCK POT JAMBALAYA
  • 2 green peppers – medium diced
  • 2 onions – medium diced
  • 4 stalks of celery – sliced
  • 4 garlic cloves – chopped
  • 1 can chicken broth
  • 1 - 14 oz. can diced tomatoes
  • ½ - 6 oz. can tomato paste
  • 3 – 4 boneless, skinless chicken breasts – cut into bite-sized pieces
  • ½ lb. smoked sausage – sliced
  • 1 tsp. cayenne pepper
  • 1 tsp. Tabasco or hot pepper sauce
  • ½ tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. thyme

 Add all ingredients to the crock pot.  Cook on low 8 – 10 hours or on high 3 – 4 hours. 

 Add 1 pound of shelled shrimp in the last 15 minutes of cooking time.  (Pre-cooked frozen shrimp works well.)  Then add 3 cups of cooked rice when ready to serve.

Crock Pot Chicken Caccitore
 
1 cut-up fryer (or 4 leg quarters)
2 med. onions, sliced
1 clove of garlic, minced
1 14.5 oz. can of diced tomatoes (you can use whole, but break them up)
1 14.5 oz. can of tomato sauce
1 tsp. salt
1/2 tsp. pepper
1 - 2 tsp. basil
1 - 2 Tbsp. oregano
1/4 cup white wine (optional)
1 bay leaf (optional)
 
Layer the ingredients as shown.  Mix the spices into the tomato sauce so they don't dry out.  Cook in the Crock pot on low 4 - 6 hours, or on high 2 - 3 hours.  Remove the chicken, and debone, putting the bite-sized meat into the sauce.  Stir, and serve over cooked spaghetti, topped with parmesan cheese.  Family tradition says whomever gets the bay leaf on their plate (DON'T EAT IT), gets to do the dishes. 
 
For a lower fat recipe, remove the skin before cooking, or use boneless, skinless chicken breasts.

Cream of Mushroom and Onion Soup Pork
4-6 boneless pork chops
2 cans (or 1 family sized) cream of mushroom soup
1 packet of onion soup mix
2-3 tbsp milk
4-6 servings of rice prepared.
 
in a bowl mix together all ingredients except pork until smooth and no clumps are left from dry soup.  Spread about 1/4-1/2 cup of soup mixture on the bottom of crock.  Place chops on top of that and cover with remaining soup mix.  Cook on either low or high temps until pork is done reaches desired tenderness. (I have cooked it for 3 hours and as long as 6)

Crock pot cheesy potatoes
 
2 lb. bag frozen southern style hashbrowns (cubed)
16 oz. container sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 lb velveeta cheese
1 jar hormel bacon bits
1 small onion chopped
1/4 cup margarine melted
 
Mix all ingredients in crock pot.  Set to low for 5 hours.  Enjoy!!
 
Made this for the first time over labor day.  Yummy!

Hi Mary Beth, I agree with you about the mushrooms. I substitute cream of
chicken when I can. If I have to use mushrooms (hubby loves them, especially
morel ) I just try to use large ones and pick them out.

SLOW COOKER SWEET & SOUR PORK
 
Ingredients:
1-1/2 pork loin, cut into 1-inch pieces
1 medium onion, chopped
1 can (14-1/2 oz.) chicken broth
1 bottle (14 oz.) Kraft Sweet & Sour Sauce
1 can (14 oz.) pineapple chunks, drained
1 medium green pepper, chopped
2 cups minute white rice, uncooked
 
1.  Place pork into slow cooker; top with onion, broth, and sweet & sour sauce.
2.  Cook on LOW for 8-10 hours (or on HIGH for 5 hours).
3.  Add pinapple, green pepper, and rice; mix well.  Cover and cook an additional 20 minutes.

I don't measure when I cook (almost everything is to taste) so I hope this is easy enough to follow.
 
Southwest Chicken Chili
 
2 whole boneless skinless chicken breasts browned and shredded
1 can beef broth
1 cup water
3 chopped green onions
2 cans Mexicali Corn (or corn with chopped peppers)
2 small can chopped green chili's
1 small can tomato paste
1 medium can Chili Hot Beans
1 can Stewed Tomato's (drained) 
I also chopp up some pickled jalapeno's and add them
 
This is literally 15 minutes of prep time and taste great! I serve with some sour cream an cheese on top.
