FUNNEL CAKES


Ingredients

Starring Great for kids birthday parties or anytime you want to have a little fun!. 3 beaten eggs 2 cups milk 1/4 cup sugar 3 to 4 cups all purpose flour 1/2 tsp salt 2 tsp baking powder vegetable oil Beat eggs, sugar, and milk together. Sift dry ingredients together using only half the flour. Add to liquid ingredients. Beat until smooth. Add more flour , remembering the batter should be just thick enough so that it runs through a funnel without clogging. Heat oil to about 375 degrees in 8 or 9 inch iron skillet. Keeping finger over the bottom of funnel until ready to pour into hot oil. After filled-remove finger and swirl the dough into hot oil. Brown one side, turn with fork and brown other side. Drain on paper towel. Sprinkle with powdered sugar, cinnanon and sugar, molasses, jelly or jam or fresh fruit or whatever your heart desires. Remember the oil is very hot so please watch out for the splashes. My children always thought these were great! Makes 13-16 funnel cakes. HAVE FUN! Recommended by Judy, 10/1/2000.
