LEMON LIME JELLO MOLD


Ingredients

1 pkg. (6oz.) each lemon and lime jello - disolve in 2 & 2/3 C. boiling water
Chill slightly until jellied
Add 1largecan evaporated milk chilled
1 C. cottage cheese
1/2 C. mayonaise
#2 can crushed pineapple, drained
1/2 C. finely chopped nuts
1/4 t. salt
Chill until set.
 

Procedure

NOTE:  This makes a very thick jello for salad or dessert.  If you want it softer, you can add some of the pineapple juice from what you drain off.  I use low-fat cottage cheese and mayonaise and leave the nuts a little larger than recommended.  I use pineapple in it's own juice with no sugar added.
