Lin.'s curried rice pilaf


Ingredients

1 cup of rice (long grain white)
2  1/2  cups of low sodium chicken broth (no boullion cubes, they are high in potassium!)
1 T. margarine or butter
1/2 cup orzo
1/4 cup chopped onion
2 garlic gloves minced
1/2 t. ground white or black pepper
1 t. (more or less to suit your taste) curry powder
1 T. dried parsley flakes

Procedure

Microwave:  Melt margarine or butter in 2 quart casserole.  When melted add orzo, onion, and garlic, and saute in microwave for about one minute, or until orzo turns golden brown.  Add rest of ingredients.   Cover and microwave at high for five minutes.  Reduce power setting to 50 %.  Microwave for 15 minutes or until all the liquid is absorbed.  Let stand about 5 minutes, fluff up with a fork and serve. 
Note:  This can be served as a main dish by adding frozen peas and chopped cooked chicken or turkey a few minutes before done cooking. 
Can also be made on stove top by following directions on box of rice.
