LOW POTASSIUM RISOTTO


Ingredients

RISOTTO
 
Risotto is a rice dish and an excellent low potassium choice.
Meat, chicken or seafood may be added.Limit very salty meats, such as bacon and ham.
Onions, garlic and sometimes mushrooms, lemon or sundried tomatoes are added for flavour. Sundried tomatoes are high in potassium and should be limited to 2 pieces per serve. Avoid English Spinach.
The rice is usually cooked in a meat or chicken stock and/or white wine. Preferably use home?made stock, which is less salty and avoid vegetable stock.
A small amount of parmesan cheese is often included in the recipe. Avoid sprinkling with extra cheese when serving.
