Cranberry Apple Stuffing


Ingredients

1/2 cup unsalted butter/margarine (not necessary if you use the microwave to "saute", use a small amount of water or broth instead.
1 onion chopped
1 1/2 cups chopped celery
4 cups day old bread cubes
1/2 tsp. salt  (optional)
1/2 tsp. poultry seasoning
1/8 tsp. ground black pepper
1 cup fresh cranberries chopped
2 cups sliced pared apples
 
 

Procedure

In small skillet (you can use microwave and water or broth) melt butter.  Addonion and saute until transparent. In large bowl combine celery, bread cubes, salt, poultry seasoning, pepper, and cooked onions.  Toss in cranberries and apples.  Reserve some apple slices to garnish if desired.  (brush with lemon juice to keep from darkening).  You can use this to stuff turkey, chickens, cornish hens, or even duck!
