found this: Is there a substitute for sweetened condensed milk? <IFRAME marginWidth=0 marginHeight=0 src="http://rcm.amazon.com/e/cm?t=ochefcom-20&o=1&p=8&l=as1&asins=B00006CJLQ&fc1=000000&lc1=0000ff&bc1=ffffff<1=_blank&nou=1&IS2=1&bg1=ffffff&f=ifr" frameBorder=0 width=120 scrolling=no height=240></IFRAME> <ALIGN="LEFT"> The best make-your-own version is to mix 1 cup of evaporated milk with 1-1/4 cups of sugar in a saucepan, heat until the sugar is completely dissolved, and let cool. If you don't have evaporated milk on hand either, you can make your own by slowly simmering any quantity of milk in a pan until it reduced by 60%. Sweetened condensed milk has a shelf life of about a thousand years, though, so pick up one or two cans on your next trip to the market and you’ll never need a substitute again (it’s a good idea to turn the can over every two months or so, to keep the sugar well dispersed throughout the milk). |

Adding this tidbit from another group....sounds yummy! Hello all!I have a great tip for the Silicone Cupcake Pan. I make a Garlic Herb Butter in the pan. We went to a Director's retreat and the chef that was there made this. I figured why not try it in the cupcake tray. Here's how you do it:
Garlic Herb Butter
1 pound unsalted butter softened 2-3 cloves garlic, pressed 1/4 cup chopped fresh basil 2 scallions chopped (1/2 of a small red onion may be substituted-<WBR>also makes for beautiful color) Salt, to taste
Soften your butter, using the Garlic Press, press 2-3 cloves of garlic into the butter. Make a "stack" of fresh basil leaves and roll them tight, using the Santuko Knife slice up into thin basil ribbons. Take 2 scallions and trim off the white part, using only the green part and chop small. add to mixture. Salt to taste.
Put butter mixture into your silicone cupcake tray (fill each flower to the top).place in freezer about 4-5 hours or overnight. Pop out onto a Simple Additions Platter. Makes approx. 7-8 butter "flowers"...<WBR>Keep in freezer and bring them to your shows and serve with canape bread that has been toasted.
***This is a great way to display the pan because it really shows the flowers when you pop them out. Easy cleanup and great for a garnishing show!
Hope you like the idea...Happy cooking!

I'm having a problem with the UNDERSIDE of my pan getting all STICKY & TACKY. Anyone else having this same problem with theirs? I use the nonstick spray that is recommended....it almost seems like the spray is weeping (microscopically) through to the underside. It's really gross & I'm not too keen on bringing it shows anymore. I've done all the usual cleaning regimes (baking soda, vinegar, Dawn dishwashing soap, etc). Please somebody tell me I'm not alone with this as well give me some advice on how to get this thing CLEAN & sticky/tacky-free. TIA, Marian |

PS The reason I'm asking for help is b/c this happened just a week ago at my Show when I pulled it out of its box to use for the Molten Chocolate Cupcakes. PLUS, I'm having a REAL HARD time keeping it CLEAN on top!!! Eww.... |

Hi Marian, I have had the same problem on the top and bottom. I used my Magic Eraser on it and it looks loads better. I agree with your theory about the Pam leaking through. HTH, Mary |

I put mine in the dishwasher (it only fits on teh top rack) and mine looks great. The other night, DD was sweet enough to wash it for me after we made cupcakes - and she's only 5. She got it sparkling clean for me by hand. |
