Banana Cupcakes
[turn on oven first to set temperature ] then
get your bowls and a whisk that you will need 
plus all the items on the list :
and lots of cupcake  paper liners ]
ask mum or dad for the teaspoons that you will use .

1/2 cup shortening  or butter
1 teaspoon vanilla [ not overflowing]
1 cup sugar
2 eggs
2 1/4 cups sifted cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1 cup mashed ripe bananas, about 2 large ripe bananas
1/4 cup buttermilk :

Whip  shortening and vanilla; [until it is like cream ]-
add sugar gradually, beating until light and fluffy.
Add eggs one at a time, beating well after each addition.
[no eggshells
Sift together the dry ingredients;
add alternately[first one then the other
with banana and milk to the creamed mixture,
beating well after each addition.
Fill greased and floured or
paper lined muffin cups about 1/2 full. [remember only half full ]
Bake at 375° for 18 to 20 minutes, [look at clock on oven ]
or until done.
Cool and frost as desired.
Makes about 24 to 30 cupcakes.

Traditional English Scones

1.     2 1/2 cups flour, all purpose;  
  [SR is not   marked on bag]      

2.     6 tblsps.   sugar;    
                  
3.      1 1/2 tblspsns   baking powder; NOT SODA  !    
       
4.      1/2   tsp   salt
;[remember it is the small one ]

5.      4 1/2 tblspsns    butter, chilled, unsalted, cut in pieces; 
           [the size of a dice ]     

 6.     1 cup  whole milk;  NOT TRIM  .or SKIM
 
 7.     2 large  eggs;

 8,      1 cup raisins (optional);
     [this means you do not have to add it.]

9.      1 egg yolk beaten with 2 tbls water, (glaze] in bowl  . 
 
                           NOW
  
         Preheat the oven to 375 degrees.
 
 Butter and flour a large, heavy cookie sheet.
 
[grease and sprinkle it  with flour ]
 

 Mix the first 4 ingredients in large bowl.

 Cut in the butter until the mixture resembles fine meal.

 Stir in the milk, eggs  &  Add the raisins.

 Mix until thoroughly incorporated.
  [that's : all together with no lumps ]

 Turn dough out onto lightly floured surface.

 Roll the dough into a 1" thick round.

 Cut out rounds using floured 3" round cookie cutter.

 Gather scraps and re-form into a 1" thick round.

 Cut out more rounds.

 Transfer the rounds to the prepared cookie sheet,

 spacing evenly.     Brush with glaze.

 Refrigerate 15 mins.
 
then put in oven and

 Bake until golden brown, about 25 mins.

 Serve scones warm with berry preserves.or
         chocolate  frosting  
 and insert slivers of butter.

  ANZAC BISCUITS
 
Take a large bowl and a big spoon , cup and a knife .
if you are old enough , mum may show you what metric is on the spoons and turn the oven on to 180. oC
 
 
ANZAC BISCUITS.
first you get
50g[2ozs] plain flour;
75g[3ozs] white sugar.;
2/3 c. fine coconut;
2/3c. porridge kind of rolled oats.;
and mix in big bowl .

50g[2 ozs.] butter.;
1 tbsp. golden syrup.;
melt in small pot . on top of stove
 
1/2 tsp. bicarb soda .;
2tbsps boiling water.
mix into small pot that the yummy golden syrup is in .

[mix together flour , sugar, coconut, & rolled oats.
melt butter and golden syrup.dissolve bicarb soda
in boiling water.and add to butter and golden syrup.]
 
THEN
make a well in centre of flour ,
 
stir in liquid .
  
mix well until all flour is a lumpy gummy mess.

Place in spoonfuls on cold greased tray,

Bake in mod. oven [180 oC  ]350F - for 15-20 mins. 
when you take out of the oven
please use a thick teatowel or oven mitt.
or you will burn your hands .

mum can print this off too.

For this one you have to use a real big bowl
 
as there are lots of stuff to add to it.
 
 
Pumpkin Bread
3 1/2 cups plain flour;    
1 1/2 teaspoons salt;
2 teaspoons baking soda; NOT baking Powder
1 teaspoon. cinnamon ( rounded teaspoon NOT heaped);
1 teaspoon nutmeg;
2 1/2 cups white sugar; NOT Icing sugar

Sift or stir all the above.

Add:
1 cup salad or cooking oil;
4 eggs; and NO shells !
2/3 cup water;
2 cups cooked pumpkin;
1 cup nuts, chopped (optional) means NOT have to really .
 
Mix just until creamy.

Spray 2 loaf pans with non-stick spray; set aside.

Bake at 350 degrees for 1 hour to 1 hour 15 mins.

AND Get mum to test it with a knitting needle and
 
remind her to wear mitts to hold the dishes with !!!

*** Gingerbread Men ***

1/2 cup shortening
1 egg
1/2 cup brown sugar
1 1/2 cup flour
1 pkg. instant butterscotch pudding mix
1 1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
Favorite frosting
raisins & candies
Cookie cutter 

Mix together egg, shortening, and brown sugar. Add remaining ingredients. Roll out dough and cut into gingerbread men shapes with a cookie cutter. Bake for 10 minutes at 350 degrees. Decorate men using favorite frosting and candies. It's fun to make these after reading the classic tale of The Gingerbread Man.

Children like this recipe because the gingerbread is sweeter and chewier than the traditional molasses cookies.

*** Rice Krispie Bars ***

6 cups Kelloggs Rice Krispies
1 bag of white marshmallows
3 tablespoons butter or margarine
No-stick cooking spray


Melt the margarine in a no-stick pan and add the entire bag of marshmallows. Stir over medium heat until the marshmallows have completely melted. Add Rice Krispies and mix together well. Pour mixture into a 9" x 13" pan that has been greased or sprayed with no-stick cooking spray. Use a baggie that has been sprayed with no-stick spray to spread and flatten mixture. Cut into squares when cool. Kids love making and eating these easy treats!

Child proof halloween cookies:
You can use whole wheat flour in
place of the all-purpose flour,
if you wish." 
Original recipe yield: 3 -4 dozen.

INGREDIENTS:
1 1/2 cups confectioners' sugar
1 cup butter flavored shortening
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
-----------------
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease your cookie sheets.
Mix the sugar, shortening, egg, vanilla and almond extract until creamy. Mix in the flour, baking soda and cream of tartar. Make several small balls of dough. Roll out dough to about 1/8 or 1/4 inch thick. Cut into desired shapes with well floured cookie cutters. If desired, press candies, raisins, nuts or sprinkles into cookies. Place cookies onto the prepared sheets.
Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes, depending upon whether you like hard or soft cookies. Remove cookies and let cool on a rack. Serve warm with a glass of milk. They are also good with ice cream wedged in the middle of two cookies.

HONEY FRUIT NUGGETS  
Makes 20 nuggets

    1/4 cup dried pitted prunes
    1/4 cup dried apricots
    1/4 cup dried figs
    1/4 cup pitted dates
    1/3 cup wheat-flake cereal; (1 cup uncrushed)
    1/4 cup honey
    1/2 square unsweetened chocolate; melted
    Non-stick cooking spray
    (coconut or chopped nuts for rolling)

Let prunes and apricots stand in boiling water for 5 minutes. Drain. Put all fruit through food chopper and blend with crushed cereal. Blend in honey and melted chocolate. Spray hands with non-stick cooking spray and shape mixture into 1-inch balls. Roll in coconut or chopped nuts. Chill or set aside to "ripen." Can be made ahead of time.

CARAMEL CEREAL CRISPS
Makes 20 crisps

    1/4 cup butter or margarine
    1 tablespoon light corn syrup
    1 cup dark brown sugar
    1 tablespoon water
    1/8 teaspoon salt
    3-1/2 cups crisp rice cereal

Combine butter and corn syrup in heavy skillet; place over low heat until butter melts. Add sugar, water, and salt. Cook until mixture comes to a full boil, stirring occasionally. Boil 3 minutes or to the firm ball stage (242 to 248 degrees). Add cereal all at once while still over low heat and stir until evenly coated. Quickly spread mixture in buttered 13 x 9 x 2 inch pan. Mark in pieces at once. When cool, turn candy from pan and break in pieces with knife handle.

FRUITY GRANOLA
Makes 6 cups

    1/3 cup light brown sugar
    1/4 cup vegetable oil
    1/4 cup water
    1/4 teaspoon salt
    3-1/2 cups regular oats
    1/2 cup sunflower seeds OR chopped nuts
    1 6 oz pkg dried fruit bits
    Non-stick cooking spray

Combine brown sugar, oil, water, and salt in a small saucepan. Heat, stirring until sugar is melted. Drizzle mixture over oats, tossing well. Spray non-stick coating on a large shallow baking sheet and spread oats. Bake at 250 degrees 30 minutes, stirring occasionally and add the seeds or nuts the last 10 minutes. Cool. Stir in dried fruit bits. Store in a tightly covered container. 

 if it was me [Annie ] . I'd add some lovely choc bits to it before you put it in the container  makes it taste better too .and see how many you can get when its ready to eat
