Lazy Daisy Cake
4 eggs 2 cups sugar 2 tsp. vanilla extract 2 cups all purpose flour 2 tsp. baking powder 1/2 tsp. salt 1 cup milk 1/4 cup butter
Frosting: 1 1/2 cups packed brown sugar 3/4 cup butter, melted 1/2 cup half and half cream 2 cups flaked coconut
In a mixing bowl, beat eggs, sugar and vanilla until thick, about 4 minutes. Combine flour, baking powder and salt. Add to egg mixture and beat just until combined. In a saucepan, bring milk and butter to a boil, stirring constantly. Add to batter and beat until combined. Pour into a greased 13 x 9 inch baking pan. Bake at 350 degrees for 35 to 40 minutes or until cake tests done. Combine frosting ingredients and spread over warm cake. Broil until lightly browned. about 3 to 4 minutes. |
