Grilled Veal Chops 
4 oz. blue cheese    
1 TB butter, softened    
2 tsp. lemon juice   
1 TB minced fresh parsley    
1/2 tsp. salt    
1/4 tsp. ground black pepper     
4 (8 oz. ea.) veal chops, 1 inch thick   
2 TB extra virgin olive oil (EVOO)   
        
    
1. Preheat grill or broiler. Combine blue cheese, butter, lemon juice, 
parsley, salt and pepper in 
a small bowl. Mix with a spatula until smooth. Spoon mixture onto an 18 inch 
piece of waxed paper; 
roll into a log. Chill for 15 minutes. 
    
2. Meanwhile, brush chops with olive oil. Grill for about 5 minutes on each 
side for medium. Place 
chops on individual plates. Divide topping among chops. 
Makes 4 servings.
