Beef Lombardi
1 lb ground beef
10-oz can tomatoes with chilies
14-oz can chopped tomatoes
2 tsp sugar
2 tsp salt
1/4 tsp pepper
6-oz can tomato paste
1 bay leaf
1/2 of 1-lb pkg egg noodles
6 green onions, sliced
1 cup sour cream
1 cup grated parmesan cheese
1 cup grated sharp cheese, such as cheddar
1 cup grated mozzarella cheese
Brown ground beef in a large skillet. Drain off drippings. Stir into beef, both cans of tomatoes, sugar, salt, & pepper. Cover & simmer for 5 minutes.
Add tomato paste, & bay leaf. Cover & simmer 30 minutes.
Meanwhile, cook noodles in a saucepan according to pkg directions. Drain.
Return noodles to the saucepan, & mix in sliced green onions, & sour cream. Place creamy noodles in a lightly greased 9x13 baking pan.
Top with beef mixture. Sprinkle with cheeses.
Cover & bake at 350~f for 30 minutes. Uncover & bake an additional 5 minutes.
Makes 6-8 servings.
