Ingredients
15-ounce can garbanzo beans, rinsed and drained¾ cup chopped purple onion1 medium tomato, peeled, seeded, and chopped1 cup diced red bell pepper½ cup chopped ripe olives1 cup celeryDressing:3 tablespoons minced fresh parsley2 tablespoons lemon juice2 tablespoons red wine vinegar3 tablespoons canned low-sodium chicken broth1 teaspoon olive oil¼ teaspoon salt¼ teaspoon pepper1 clove garlic, minced
Procedure
Combine garbanzo beans, onion, tomato, red pepper, olives and celery in a bowl. Toss well. Combine dressing ingredients in a small bowl; beat well with a wire whisk. Pour dressing over vegetable mixture, and toss gently. Cover and chill 1 hour.
