Beat together 4 eggs, 1/4 c. lowfat cottage cheese, pepper, and dash of parsley. Add 1/4 c. skim milk with 1/2 tablespoon of flour or cornstarch to egg mixture. Fold in chopped onion, cheddar cheese, and broccoli. Spray pam onto pie pan and pour mixture into this pan. Bake at 400 degrees for 25 minutes. Exchange: 1 meat; 2 vegetable, 1/2 fat |
