My daughter (Ellen) and I ate at Olive Gardens.  The soup was so delicious we decided to try to make the soup ourselves.  Hope you try it and enjoy.  It is simple to make and we love it.
 
Italian Sausage Spinach Potato Soup
 
1 lb Italian Sausage (sauteed) either ground or sliced  links (Drain the Sausage on a paper towel to soak up excess fat.)
6 to 10 new potatoes (sliced and halved) cooked in separate water (drain)
2 - 14 oz cans of chicken broth
1 large onion sliced and quartered sauteed in butter
1 to 2 cups baby spinach (fresh preferably)
1 to 2 cups of cream or milk
Add water if you want to
Butter (as desired)
 
Boil potatoes until tender, drain.  Sautee onion in butter.  Sautee the sausage, drain onto paper towels to remove excess fat.  Add potatoes, chicken broth, spinach, onion, cream, water (if desired) and  butter to the sausage.  Simmer for about 15 minutes.  Yummy!

I copied the recipe and will give it a try.  I also have the recipe for their Minnestrone soup...we have that quite often.  Anxious to try this one...but will have to wait for the temperature to drop!  lol   TRose

LOVE OLIVE GARDEN.  ACTUALLY JUST TRIED THAT SOUP WITH SALAD THERE FOR LUNCH ABOUT A WK. AGO ....AND TOLD MONGO I MIGHT TRY TO MAKE IT TOO.   THANKS FOR POSTING....YA GAVE ME A HEAD START!
