The family appear on the 1841 census as follows (limited details I'm afraid):

George Bant b: 1816 Middlesex - Saddle Tree Rivetter (not sure what this might be)
Mary Bant b: 1816 Middlesex
Mary Bant b:1835 Middlesex
George Bant b: 1837 Middlesex
Emily Bant b: 1839 Middlesex
Eliza Bant b: 1841 Middlesex

The address shown is Wellington Street, St Leonards, Shoreditch.

I've got them on the 1851 census as well:

The address looks like 17 Wellington Road.

George Bant b: 1814 Bethnal Green - Head - Saddle Tree Rivetter
Mary Bant b: 1814 Shoreditch - wife
Emily Bant b: 1839 Shoreditch - daughter
Eliza Bant b: 1841 Shoreditch - daughter
Charles Bant b: 1844 Shoreditch - son
Ellen Bant b: 1848 Shoreditch - daughter

Interestingly enough, I've found that George Bant b: 1837 is listed as a servant in 1851 with the following JACOBS family at 27 Nelson Street:

Jospeh Jacobs b: 1826 Bethnal Green  - Head - Licensed Victualler
Charlotte Jacobs b: 1827 Bethnal Green - Wife
Charlotte Jacobs b: 1850 Bethnal Green - Daughter
George Jacobs b: 1832 Bethnal Green - Brother - Barman

That looks like we've found one of the Jacobs connections then!!

As we know, Mary had already married Charles William Robertson by the time the 1851 census was taken - hence the reason she doesn't show as Bant!

I have found a few birth records of the children, as follows:

Births Dec 1838   (>99%)
Bant  Emily    Shoreditch  2 352

Births Mar 1841   (>99%)
BANT  Eliza    Shoreditch  2 42[25]  Scan available - click to view
Bant  Eliza    Shoreditch  2 423  Scan available - click to view

Births Mar 1848   (>99%)
BANT  Ellen    Shoreditch  2 449

As George (and Mary) were born before the 1837 compulsory records, I can find no actual record for them.  Charles is also proving elusive - the only one recorded was born in Stratford!  Again, I'm wondering if Charles was perhaps a middle name that was used instead.

By the time the 1861 census was taken, there were more children!  Here's what I've found for the family then:

George Bant b: 1814 Bethnal Green - head - Saddle Tree Maker
Mary Bant b: 1813 Bethnal Green - wife
Charles Bant b: 1844 Shoreditch - son
Edward Bant b: 1851 Bethnal Green - son
Eliza Bant b: 1841 Shoreditch - daughter
Ellen Bant b: 1848 Shoreditch - daughter
Robert Bant b: 1855 Bethnal Green - son
Emily Cole b: 1839 Shoredtich - daughter
John Cole b: 1835 Stepney - son-in-law - Fancy Box Maker

The address is:  3 Aske Street, St Leonards, Shoreditch.

By 1871 George was living at Lewington Place, Hackney and is recorded as employing one man and three boys.  He is residing with his wife Mary and sons Charles, Edward and Robert who, like their father, are listed as Saddle Tree Smiths.

There are two boarders also residing with them - William Wiltshire and his wife Alice.

According to the 1881 census George is a Sadletree Fitter (Saddler) - this just about answers that question!

Also by then Mary had died:

Deaths Dec 1871   (>99%)
Bant  Mary  60  Shoreditch  1c 131

and George had remarried:

Surname  First name(s)    District  Vol  Page

Marriages Sep 1872   (>99%)
Bant         George              Bethnal Green  1c 660
SELLWOOD  Annie Leighton    Bethnal Green  1c   660

and was living at 1 Baldwin Street, Holborn.

I have found a death record for George as follows:

Deaths Dec 1882   (>99%)
BANT  George  68  Shoreditch  1c 65  Scan available - click to view

Annie Bant (his second wife) is residing with her Son and Daughter-in-Law by the time the 1891 census was recorded.
