My husband called me a little while ago and told me that he was at the Bloom store buying something for dinner and wanted to know what I wanted.  I told him that if he was cooking, it didn't matter!  We're having Cowboy Ribeyes (grilled) with twice baked sweet potatoes (new recipe for me), salad, and rosemary/garlic bread.  YUMMY!!!!  And the best part is that I don't have to cook it!

I thought I would share the recipe for the twice baked sweet potatoes.  I got the recipe from my Kraft Food and Family magazine and it just sounded good.  I'll let you know.
 
 
Twice-baked Sweet Potatoes
 
Prep: 10 minutes
Total: 53 minutes
Makes 4 servings, 1 stuffed potato half each
 
Ingredients:
2 large sweet potatoes (1 1/2 lb)
2 oz (1/4 of 8 oz pkg) Neufchatel Cheese
2 Tbsp fat-free milk
1 TBSP brown sugar
1 tsp ground cinnamon
1/4 cup pecan pieces
 
Directions:
Heat oven to 425
Cut potatoes lengthwise in half; place, cut sides down, in foil-lined baking pan.  Bake 30 to 35 minutes or until tender.
 
Scoop out centers o potatoes into bowl, leaving 1/4 inch thick shells.  Add Neufchatel cheese, milk, sugar and cinnamon to potatoes; mash until blended.
 
Spoon potato mixture into shells; top with nuts; Bake 8 minutes or until potatoes are heated through and nuts are toasted.

Logan I am so glad you posted that Sweet Potato Recipe you knew I was gonna ask for it.  I think we will try those taters  tomorrow night with our steak.  But tonight my sweet husband is cooking fish tacos with citrus salsa and tortillas chips.  I wonder what Scott and Roy have up their sleeves being so sweet, LOL!

I think I am going to thaw out some frozen-previously  grilled fajitas and have those.It's just me all alone tonight.
