Honey Mustard Easy Franks - Genie
 
8 beef frankfurters
1 tblsp butter or margarine
1 onion, thinly sliced
3/4 cup ketchup
1/4 cup yellow mustard
1/4 cup honey
 
Bring a saucepan of water to a boil.  Add franks and cook for 4-5 minutes or until heated through; drain.  Heat butter in a large heavy skillet over medium heat.  Saute onion until translucent.  Stir in ketchup, mustard and honey.  Stir in franks and heat. Add some green beans and mashed potatoes and you have a good quick meal.
 
Makes 4 servings.

Saucy Franks with Rice

Ingredients
1 pound Beef Franks, cut into bite-size pieces
5 cups hot cooked rice
4 bacon strips, diced
½ cup chopped onions
1/3 cup chopped green pepper
1/3 cup chopped celery
2 garlic cloves, minced
1 cup unsweetened pineapple juice
¾ cup ketchup
¼ teaspoon salt
¼ teaspoon chili powder

In a saucepan over medium heat, cook bacon until crisp. Remove bacon to paper
towels; set aside. Drain, reserving 1 tablespoon of dripping. Saute onion, green
pepper, celery and garlic in drippings until tender. Add pineapple juice,
ketchup, salt, and chili powder; mix well. Bring to a boil. Add hot dogs; return
to a boil. Reduce heat; cover and simmer for 5-8 minutes or until heated
through. Serve over rice. Sprinkle with bacon. Yield: 8 servings

Frank And Bean Bake With Corn Bread Topping



Makes: 12 servings

Prep: 10 minutes

Bake: 1 hour

Cook: 15 minutes





* 2 packages (12 ounces each) all-beef franks

* 4 cans (16 ounces each) vegetarian beans

* 1/4 cup ketchup

* 2 tablespoons Dijon-style mustard

* 2 tablespoons dark-brown sugar

* 2 tablespoons dark molasses

* 2 teaspoons hot-pepper sauce

* 2 green onions, including part of the green, chopped

* 2 tablespoons olive oil

* 1-1/3 cups yellow cornmeal

* 2/3 cup all-purpose flour

* 2 tablespoons granulated sugar

* 2 teaspoons baking powder

* 1 teaspoon salt

* 2 eggs

* 1 cup milk



Directions



1. Heat oven to 350 degrees F.



2. Brown franks in large skillet, about 3 minutes on each side. Cut

diagonally into 1-inch pieces.



3. Mix beans, ketchup, mustard, sugar, molasses and pepper sauce in 13

x 9 x 2-inch baking dish. Stir in sliced franks. Can be prepared a day

ahead to this point and refrigerated.



4. Bake in 350 degree F oven 30 minutes.



5. Meanwhile, sauté green onion in oil over medium heat until

softened, 3 to 5 minutes. Set aside.



6. Whisk cornmeal, flour, sugar, baking powder and salt in a bowl.

Stir in green onion along with cooking oil.



7. Mix eggs and milk in small bowl. Stir into flour mixture until

smooth. Spoon over casserole.



8. Bake for 30 minutes more or until top is golden brown. Let cool 10

to 15 minutes before serving.
