Beef, Black Beans and Rice

2 tablespoons oil
1/2 pound lean ground beef
1 cup chopped onion
1 cup chopped bell pepper
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon prepared mustard
1 teaspoon chili powder
2 tablespoons soy sauce
1 dash cayenne pepper
1 cup tomato sauce
2 cups cooked drained black beans
3 cups cooked white rice

Heat oil in large skillet over medium heat.

Add beef, onions, green pepper, and garlic and saute until tender, stirring frequently.

In a small bowl combine lemon juice, mustard, chili powder, soy sauce, and cayenne with a small amount of tomato sauce and whisk until thoroughly blended.

Stir in remaining tomato sauce, then add to meat mixture.

Add beans and cook for 20 minutes, or until flavors are well blended. Serve spooned over hot rice.

Serves 6.

Beef Taco Skillet

1 pound lean ground beef
1 package hamburger helper, beef taco brand
3 2/3 cups hot water
15 ounces kidney beans, rinsed and drained
1/4 cup milk
1 large tomato, chopped

Brown beef in 10-inch skillet over medium-high heat, stirring occasionally; drain. Stir in Sauce Mix, hot water and beans. Heat to boiling, stirring occasionally. Stir in uncooked Pasta. Reduce heat; cover and simmer 10 minutes, stirring occasionally. Remove from heat. Stir Supreme Topping mix and milk in bowl about 30 seconds or until almost smooth. Spoon and lightly spread cheese mixture evenly over beef mixture. Let stand uncovered about 5 minutes or until sauce is as thick as you'd like (sauce will thicken as it stands). Sprinkle with tomato and olives.

Tamale Pie

1/2 pound lean ground beef
1/2 medium onion, coarsely chopped
1/2 medium green bell pepper, chopped
1/2 package taco seasoning
1 small can tamales, cut into 1-inch chunks
1 small can corn
1 box Jiffy cornbread mix

Brown beef in skillet and drain. Cook onion and bell pepper
until crisp tender or cook with beef. Add taco seasoning,
tamales and corn. put in baking dish and top with prepared Jiffy
cornbread mix. Bake at 350 degrees until cornbread is done.

Chili-Cheese Bake

Country Woman



SERVINGS: 6

METHOD: Baked

TIME: Prep: 10 min. Bake: 35 min.



Ingredients:

3 cups cooked rice

2 garlic cloves, minced

1 can (4 ounces) chopped green chilies

2 teaspoons chili powder

1/2 teaspoon salt

1 can (15 to 16 ounces) red kidney beans, rinsed and drained

1 medium onion, chopped

2 teaspoons ground cumin

1 teaspoon dried oregano

1 teaspoon Creole seasoning

2 cups (8 ounces) shredded sharp cheddar cheese, divided



Directions:

In a greased 2-qt. saucepan, combine all ingredients except cheese. Top

with 1-1/2 cups of cheese. Bake, covered, at 350° for 25 minutes. Top

with remaining cheese, then bake, uncovered, 10 minutes more. Yield: 6

servings.

Easy Nachos

Here is a quick, cheap, and easy meal idea, nachos with refried
beans, browned hamburger meat, cheese, tortilla chips.  Place
chips on a cookie sheet, top with hamburger meat, refried beans
and cheese. Bake until cheese is melted and serve with sour
cream, and for an easy clean for the pan, use tinfoil.

Impossible Quesadilla Pie
2 cans (4 oz. each) chopped green chilies, drained
4 c. shredded Cheddar cheese
2 c. milk
1 c. Bisquick baking mix
4 eggs
Instructions
Heat oven to 425 degrees. Grease pie plate, 10 x 1-1/2 inches. Sprinkle chilies and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake until knife inserted between center and edge comes out clean, 25 to 30 minutes. Cool 10 minutes. Serve with sour cream and guacamole if desired. 6 to 8 servings..

Mexican Goulash



1 lb ground beef

1 cup Mild, Medium,or Hot Taco Sauce

3 cups cooked macaroni

1 can whole tomatoes

1 can tomato soup

1 can cream of mushroom soup

1 large onion, diced



Brown ground beef and drain fat. Cook macaroni and drain. Combine all ingredients. Heat and serve.

Beef Burrito Casserole
1 can refried beans
1 c. Bisquick
1/4 c. water
1 lb. hamburger, browned
1 (16 oz.) jar medium salsa sauce
1 1/2 c. shredded cheese
Sliced green or black olives
Instructions
Mix together first 3 ingredients and put in bottom of greased 9 x 13 pan. Layer top with hamburger, salt, cheese and olives. Bake at 375 degrees for 30 minutes. Serve with lettuce and sour cream.

Burrito Bake

1 16 ounce can refried beans
1 cup Bisquick
1/4 cup water
1 pound ground beef
1 cup salsa
1 1/2 cup shredded cheese

Spray 9 inch pie pan with Pam. Mix refried beans, Bisquick and water together. Spread in pie pan and scoop out center to form crust. Brown ground beef, then put in shell. Pour salsa over beef, spreading evenly. Spread cheese over salsa. Bake at 375F for 30 minutes. Serves 4 to 6.

Easy Taco Pie

1 envelope (1 & 1/4 oz.) taco seasoning mix
1 can (4 & 1/2 oz.) chopped green chilies, drained
1 cup milk
2 eggs 
1/2 cup Bisquick 
3/4 cup shredded Monterey Jack or cheddar cheese (3 oz.)
salsa, if desired
sour cream, if desired

Heat oven to 400 degrees. Grease 9 inch pie plate. Cook ground beef and onion in a 10 inch skillet over medium heat, stirring occasionally, until beef is brown. Drain. Stir in seasoning mix (dry). Spoon into pie plate. Top with chilies. Stir milk, eggs and Bisquick until blended. Pour into pie plate. Bake about 25 minutes or until a knife inserted into the center comes out clean. Sprinkle with cheese. Bake 8 to 10 minutes longer. Cool for 5 minutes. Serve with salsa and sour cream.

Mexi Rice

2-3 cups cooked rice
1 can tomato sauce (small)
1 lb ground beef
1 small onion chopped
1/2 can fiesta cheddar soup
1/2 pkg. taco seasoning mix
1 sprig chopped cilantro
salsa if desired

in large skillet brown beef and onion. Drain.

Add cooked rice, tomato sauce and soup.

Add remaining ingredients simmer 5 minutes.

Add salt and pepper to taste. Top with chopped black olives and cilantro.

1 env. Lipton Onion Soup Mix

1 can (15 oz.) red kidney or black beans, drained

1-1/2 cups water

1 can (8 oz.) tomato sauce

1 TB chili powder

1 TB Tabasco or to taste

1 bag (10 oz.) corn chips

1 pkg. (8 oz.) shredded cheddar cheese

In 12" skillet, brown ground beef over medium-high heat; drain.



Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to

low and simmer

covered, stirring occasionally, 20 minutes.



On serving platter, arrange corn chips. Spoon chili over chips and sprinkle

with cheddar cheese.

Makes 6 servings.

Rancho Beef & Rice Skillet



1 lb. lean ground beef

1 medium red or green bell pepper, diced

1 large clove garlic, crushed

1 TB chili powder

1/2 tsp. salt

3 cups cooked Minute rice, cooled

1 cup frozen peas, defrosted

3/4 cup prepared salsa

Shredded Cheddar cheese

 

In a large nonstick skillet, brown ground beef, bell pepper and garlic over

medium heat 8 to 10 minutes or until beef is no longer pink, breaking up

into crumbles.



Pour off drippings and add chili powder and salt.



Add rice to skillet and mix well. Continue cooking 2 minutes or until rice is

hot,

stirring occasionally.



Stir in peas and salsa and heat through.



Serve with grated Cheddar cheese and tortilla chips.



Makes 4 servings.

El Paso Chicken Legs

4 cups corn chips, crushed
1 1/2 teaspoons chili powder
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
6 broiler-fryer chicken legs
1/4 cup Mayonnaise

In shallow dish or on sheet of wax paper combine first 4 ingredients.

Rinse chicken and pat dry. Brush all sides with Real Mayonnaise; coat
with chip mixture. Place skin side up in shallow roasting pan. Bake at
425 degrees F for 45 minutes or until fork-tender.

Makes 6 servings.

Frugal Fish Tacos

Recipe by Rachael Johnson Ingredients:

1 pound white fish (catfish, tilapia, etc.)

4 whole wheat tortilla wraps

1 cup Mojo sauce- Cuban marinade

1 small can or 1 cup fresh, cooked corn kernels

½ cup lemon juice

¼ cup lime juice

Salt

Pepper

Cooking oil, preferably olive oil

Salsa Ingredients:

1 ripe mango

1 can Mexican Salsa Verde (green salsa)

2 tablespoons lime juice

2 tablespoons lemon juice

Salt

Pepper Extras:

Lettuce

1 bag Vigo or similar yellow rice with black beans

Slices of lemon and limes for garnish Directions:

Sprinkle the fish with salt and pepper. Marinate fish in one cup of mojo sauce for ½ hour to an hour. Marinating longer will actually “cook�?the fish so be careful. Remove fish from the marinade and discard remaining sauce. Sauté fish in 4 tablespoons of olive oil. Brown lightly on each side. While the fish is cooking, you may prepare your salsa. Cut up one mango, discarding the skin. Combine with the Mexican Salsa Verde, lime juice and lemon juice. Salt and pepper to taste. Set aside. Warm tortillas in foil in the oven at 350 degrees for 7 minutes. Remove fish from the pan. Place tortillas on a plate and place torn lettuce on wraps. Place fish on top of the lettuce. Top with the fresh mango salsa and eat!

Note: Mexican Verde Salsa has all the spices in one can for less than a dollar. Cilantro, garlic, etc. is included all in one can for so much less than buying it separately. Rice with the beans included in the mix is a cheap trick. Any white fish will do in this recipe. Whatever is on sale will do the trick, even frozen.
