Cajun Crockpot Pork and Beans - Genie

5 cans Pork-n-Beans (2nd to smallest size)
2 8oz cans tomatoe sauce
2 onions (chopped)
6 hot links (sliced)
1/4 bottle barbeque sauce (average size)

Add to your taste the following:

Worcestershire sauce
Hot sauce
Cajun Seasonings
Liquid smoke
Mustard
Brown Sugar

Mix all ingredients in a crockpot and crank it up to high.
Let it cook all day, stirring occasionally.
Can also be made on the stove top, but let it simmer for
several hours stirring occasionally.

Red Beans and Rice - Genie 

1 pound small dried red beans, soaked overnight and drained

1 onion, chopped

3 cloves garlic, minced

salt and pepper, to taste

6 cups hot cooked rice

1 cup chopped green onions

1 ham bone, cracked

Place beans in crock pot and add remaining ingredients, except rice and green onions, with 1-1/2 quarts water. Cover and cook on high 2 hours. Turn heat to low and cook, covered, 10 to 12 hours. Remove ham bone and mash some of the beans against the side of the pot to thicken the remaining liquid. Remove meat from bone and return meat to pot. Season with salt, pepper and serve with rice, topped with chopped green onions.

Ground Beef Creole with Rice

1 lb ground beef
1/2 cup chopped onion
1 clove garlic, minced
1 (16 oz) can stewed tomatoes
1 medium green pepper, cut into thin strips
2 cups diagonally sliced celery
4 tsp paprika
2 tsp salt
1/8 tsp cayenne pepper
1 tbl all-purpose flour
6 cups hot cooked rice

In 12-inch skillet over medium heat, cook ground beef, onion and garlic
until meat is browned about 10 minutes, stirring occasionally. Spoon off
excess fat. Drain tomato liquid into mixture. Set tomatoes aside. Add green
pepper, celery, paprika, salt and cayenne pepper; heat to boiling. Reduce
heat to low; cover and simmer 15 to 20 minutes until pepper and celery are
tender, stirring occasionally. In cup, blend flour and 1/4 cup water until
smooth; gradually stir in to meat mixture and cook, stirring constantly,
until thickened. Add reserved tomatoes, heat through. Serve mixture over
rice. Makes 6 servings.

CREOLE CORN

2 slices Bacon
2 cups fresh corn
4 lg. fresh tomatoes
Green pepper
Onion
1 c. fresh okra

Fry bacon and add corn, tomato, green pepper, onion and okra. Cook 30 to 45 minutes so as not to be soupy.

TOMATO CORN OKRA GUMBO

3 c. fresh tomatoes
2 c. sliced fresh okra
1 c. fresh uncooked corn
1 c. boiling water
1 sm. onion, finely chopped
Salt to taste
1/8 tsp. Pepper
1 tbsp. butter or margarine
1 tsp. Sugar

Combine first 5 ingredients. Cover and cook until vegetables are tender and mixture is thick. Add remaining ingredients. Serve hot or warm. This is good for church suppers. Serves 6.
