Cajun and Creole Seasoning

Cajun cooking has developed a reputation for being all about
heat. Truth is Cajun flavors are more savory than hot. This
spice blend can be adjusted for heat by increasing (or
decreasing) the amount of cayenne pepper.

4 tablespoons paprika
4 tablespoons salt
3 tablespoons black pepper
3 tablespoons garlic powder
1 tablespoon onion powder
2 teaspoons cayenne
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme

Combine all ingredients. Store in an air tight container and
keep in a cool, dark place.

Creole Rub

This rub will add a delicious Creole flavor to anything you want
to grill or smoke.

1/2 cup Creole mustard
1/2 cup minced onion
1 1/2 tablespoons minced garlic
1 tablespoon hot pepper sauce
1/4 cup dry Cajun seasoning blend

Mix cajun seasoning and other ingredients together. Store in
airtight container in the refrigerator.

Chinese 5 Spice Powder Recipe



1 tsp. ground Szechwan pepper

1 tsp. ground star anise

1-1/4 tsp. ground fennel seeds

1/2 tsp. ground cloves

1/2 tsp. ground cinnamon

1/2 tsp. salt

1/4 tsp. ground white pepper



Combine all ingredients in small airtight container. Store in a cool, dry place.

Five-spice powder is a convenient seasoning in Chinese cuisine. It incorporates the five basic flavors of Chinese cooking �?sweet, sour, bitter, savory, and salty. It consists of Chinese Tung Hing cinnamon (actually a type of cassia), powdered cassia buds, powdered star anise and anise seed, ginger root, and ground cloves. Another recipe for the powder consists of huajiao (Sichuan pepper), bajiao (star anise), rougui (cassia), cloves, and fennel seeds. It is used in most recipes for Cantonese roasted duck, as well as beef stew. It is also used as a marinade for Vietnamese broiled chicken. The five-spice powder mixture has followed the Chinese diaspora and has been incorporated into other national cuisines throughout Asia.

Herb Shaker Mix



1 tsp each of basil, marjoram, onion powder, parsley,

sage, thyme, garlic powder, optional



Mix ingredients together and store in a small shaker.

Note: Use to season vegetables, salads, soups.



Makes 7 tsps.

peppers can be ground in a coffee grinder.)

1 Tbs. cumin

it!)

1/2 tsp. ground cloves



Combine ingredients to taste.

This all purpose seasoning can be also be added to salad dressings,

stews or in with simmering pork. I suggest you try this all-purpose

seasoning on just about everything.

Combine all ingredients. Mix well.

Store in a cool, dry place for up to six months.



Makes 21 teaspoons. Approximately 7 teaspoons of the mix equal a 1.25-ounce package of purchased taco seasoning mix.

Tony Chachere's All-Purpose Famous Creole Seasoning
Copycat Clone Recipe

26-oz box free flowing salt (Morton's)
1 1/2 oz box ground black pepper
2-oz bottle ground red pepper
1 oz bottle pure garlic powder
1 oz bottle chili powder
1 oz carton monosodium glutamate (Accent)

Mix well and use like salt. When it's salty enough, it's seasoned to perfection. Use generously on everything. If too peppery for children, add more salt to mixture,
then season to taste.

¼ Cup Garlic Powder

Beau Monde Seasoning Spice Mix



1 TB ground cloves

1-1/4 tsp. ground cinnamon

1 TB salt

3 bay leaves

1 TB ground allspice

2 TB ground black pepper

1 tsp. ground nutmeg

1 tsp. ground mace

1 stsp. celery seeds

2 Tb ground white pepper



Process all spices in blender or food processor.



Store in a tightly closed jar.

All Purpose Seasoning

Recipe By : Real Food for Real People



2 tablespoons Dehydrated Onion Flakes -- minced

2 tablespoons Sesame Seeds

2 tablespoons Parsley, freeze-dried -- flaked

2 teaspoons Oregano

2 teaspoons Garlic Powder

1 teaspoon Celery Seed

1 teaspoon Marjoram

1 teaspoon Dried Basil

1 teaspoon Spearmint

1 teaspoon Bay Leaf -- powdered

1/2 teaspoon Dill Seed

1/2 teaspoon Thyme

1/2 teaspoon Coriander

1/2 teaspoon Dry Mustard

1/2 teaspoon Rosemary



In a blender, blend dehydrated onion into finer pieces. Add remaining

herbs. Blend to mix well, but do not make into a powder. To keep

herbs fresh, store in shaker top bottle with tight fitting lid. Can

be used on all cooking, and at the table too to be used instead of

salt.



This is similar to a commercial product called "Instead of Salt" All

Purpose Herb Seasoning.
