Pistachio Crusted Chicken

Prep Time: 10 Minutes
Cook Time: 20 Minutes Ready In: 30 Minutes
Yields: 4 servings

Kids will love these quick pistachio chicken strips; adults will too! This
recipe is very easy, and elegant. Anyone can make it, and everyone will
enjoy it!

INGREDIENTS:
1 cup chopped pistachios
1/2 cup bread crumbs
2 tablespoons Dijon mustard
2 tablespoons olive oil
2 tablespoons honey
salt and pepper to taste
2 large skinless, boneless chicken breast halves, cut into 1-inch strips

DIRECTIONS:
1. Preheat oven to 500 degrees F (260 degrees C). Lightly coat a baking
sheet with cooking spray.

2. Mix together pistachios and bread crumbs in a shallow bowl. In a separate
bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until
smooth. Dip chicken into Dijon mixture to coat, then coat with bread crumbs.
Place onto prepared baking sheet.

3. Place into preheated oven and turn the oven down to 375 degrees F (190
degrees C). Bake until the chicken is no longer pink and the pistachio
coating is golden brown, about 20 minutes.

Chicken Nuggets



1 env. Lipton ® Recipe Secrets ® Golden Onion Soup Mix*

1/2 cup plain dry bread crumbs

1-1/2 lb. boneless, skinless chicken breasts, cut into 2" pieces

2 TB margariine



1. Preheat oven to 425° F.



In small bowl, combine Lipton ® Recipe Secrets ® Golden Onion Soup Mix and

bread crumbs.



Dip chicken in bread crumb mixture until evenly coated.



2. On lightly greased baking sheet, arrange chicken; drizzle with margarine.



3. Bake, turning once, 15 minutes or until chicken is thoroughly cooked.

Doubly Crunchy Chicken Drumettes

Pint-size versions of favorite foods are sure to bring big smiles --

and maybe even requests for seconds.



No, drumettes are not mini drumsticks; they're actually the large wing

joints of chickens.



Ingredients:



1/4 cup milk

2 tsp. creamy peanut butter

1/2 tsp. soy sauce

1 lb. chicken drumettes

1 1/2 cups corn puff cereal, crushed

Cooking spray



Directions



1.



Heat oven to 375°F. Combine milk, peanut butter, and soy sauce.

Dip chicken drumettes into mixture, then coat with cereal. Place on

greased baking sheet; spray liberally with cooking spray. Bake 25 to

30 minutes, until golden and crispy.



Yield: 10 drumettes.



Nutrition per drumette: 71 cal.; 7 g pro.; 3 g fat; 3 g carb.; 45 mg

sod.; 21 mg chol.

Barbecue Potato Chip Chicken Nuggets

1/2 cup all-purpose flour
2 eggs, beaten
6 to 7 cups (6 to 7 ounces) barbecue potato chips, crushed
1 pound boneless, skinless chicken breast, cut into 1-inch nuggets
2 tablespoons butter, melted

Preheat oven to 375 degrees.
Place flour on one plate, eggs in a large shallow bowl and crushed chips on a separate plate. Dredge the chicken in flour, dip in egg and roll in chips to cover completely with crumbs. Place nuggets on a foil-lined baking sheet. Drizzle with butter. Bake for 10 minutes, turn over and bake another 10 minutes.


Serves 4

Pepperoni Chicken


1 whole cut up frying chicken (skinned)
4 cups red sauce
3 cups shredded mozzarella
8 oz. sliced pizza pepperoni
2 cloves garlic sliced
1/2 cup romano or parmesan cheese
1 green pepper chopped chunky (optional)
1 cup sliced zucchini (optional)

Preheat oven to 350°.

In a small roaster sprayed with cooking spray, put 4 tbsp. olive oil, add garlic and chicken pieces meaty side down.

Bake covered for 30 minutes.

Turn pieces over and put 2 cups sauce on top, then the pepperoni, green pepper and zucchini.

Put last 2 cups sauce, romano and mozzarella on top.

Bake covered 30 minutes & 10 minutes uncovered.

Cheesy Chicken Fingers

12 chicken tenders, or 16 pieces of chicken breast filets cut into fingers
1 stick melted butter
1 1/2 cups of crushed cornflakes
1/2 cup shredded cheddar cheese

Preheat oven to 375 degrees.

Melt butter in a shallow bowl, put coarsely crushed cornflakes into another shallow bowl and mix in cheese.

Dip chicken pieces into butter first, then into cornflakes/cheese mixture.

Arrange chicken on a baking stone, or in a rectangular baking pan, bake at 375 degrees for about 20 to 30 minutes, until chicken is done.

Turn chicken half-way through to ensure even browning.

Serves 4 to 6.
