Scalloped Potatoes (Kids)

1 Tbsp. Butter or Margarine

6 Medium Size White Potatoes

1 Small Onion

2 Tbsp. Flour

1 tsp. Salt

Pepper

2 Cups Milk

Paprika

2 Tbsp. Butter or Margarine

Preheat oven to 350 degrees F. Grease a 2 quart casserole with the 1 Tbsp. butter or margarine. Peel the potatoes. Using a sharp knife, slice the potatoes very thin. Using a sharp knife, remove and discard the dry outer skin form the onion. Cut off both ends and discard. Thinly slice the onion crosswise, and separate into rings. Spread half of the potato slices on the bottom of the casserole. Sprinkle the flour, ½ tsp. salt, and a dash of pepper over the potatoes. Add all the onion rings in an even layer. Cover the onion rings with the remaining potato slices. Pour the milk over the layers of potato and onion. Sprinkle the top of the casserole with the remaining ½ tsp. salt and another dash of pepper. Add some generous shakes of paprika. Cut the 2 Tbsp. butter into bits. Dot the potatoes. Cover the casserole dish with a lid or aluminum foil. Bake for 35 minutes. Remove the lid or foil and return the casserole to the oven to bake for another 35 minutes more, or until the potatoes are fork-tender. Using potholders, remove the casserole from the oven and set it on a trivet or warming pad.

Pennies & Potatoes



4 cup cooked, diced potatoes

1 onion chopped

1 package Hotdogs - sliced

3 Tablespoons margarine

3 Tablespoons flour

1 1/4 cup milk

1 1/2 cups shredded cheddar or American cheese



Grease a 1 quart casserole dish. Put the potatoes,

onions and hot dogs in the dish.



Heat the butter in the microwave for 15 seconds , mix

in the flour & stir.



Add the milk and keep heating and stirring for 30

seconds until it becomes a little bit think.



Now stir in the cheese.



Pour all this over your casserole.



Sprinkle some more cheese on top.



Bake at 450* for 30 minutes.

Oven-Baked Carrot Fries



1 1/2 lbs. carrots

1 tsp. sugar

2 Tbsp. olive oil

1/2 tsp. salt

2 Tbsp. finely chopped pinch of pepper

fresh rosemary

Preheat oven to 425. Line a shallow pan with foil. Using a sharp knife, slice away the tip and end of each carrot; peel each completely. Cut carrots in half cross-wise, then cut length-wise, then cut length-wise again.

In a mixing bowl, combine the carrot sticks, oil, rosemary, salt and pepper. Stir till all are evenly coated. Place carrots in pan, spreading sticks out as much as possible. Bake for 20 minutes or until carrots are tender. Serve hot or at room temperature.

Makes 4 servings

Baked Sweet Potato Fries

4 med sweet potatoes or yams, peeled and sliced into ½"-thick wedges

1 Tbsp olive oil

¼ tsp salt

1/8 tsp black pepper

Preheat oven to 450 degrees F. Coat baking sheet with cooking spray.

Combine potatoes, oil, salt, and pepper in bowl and toss well.

Arrange potatoes in single layer on baking sheet. Bake 25 minutes, turning halfway through.

Serve immediately.
