Popover Pizza Casserole

1 pound uncooked ground turkey
1 cup chopped onion
1 cup chopped green sweet pepper
1/2 of a 3-1/2-ounce package sliced pepperoni
1 15-1/2-ounce jar pizza sauce
1 4-ounce can mushroom stems and pieces, drained
1/2 teaspoon fennel seeds, crushed
1/2 teaspoon dried oregano, crushed
1/2 teaspoon dried basil, crushed
2 eggs
1 cup milk
1 tablespoon cooking oil
1 cup all-purpose flour
6 ounces thinly sliced mozzarella cheese
1/4 cup grated Parmesan cheese

In a large skillet cook ground turkey, onion, and
sweet pepper until meat is brown and vegetables are
tender. Drain off fat.

Cut pepperoni slices in half. Stir pepperoni, pizza
sauce, mushrooms, fennel seeds, oregano, and basil
into meat mixture. Bring to boiling; reduce heat.
Simmer, uncovered, for 10 minutes, stirring
occasionally.

Meanwhile, grease the sides of a 3-quart rectangular
baking dish; set aside. For topping, in a medium
mixing bowl combine eggs, milk, and oil.
Beat with an electric mixer on medium speed for 1
minute. Add flour; beat about 1 minute more or until
smooth. Spoon the hot meat mixture into the prepared
baking dish. Arrange mozzarella cheese on top of meat
mixture. Pour topping over mozzarella cheese, covering
completely. Sprinkle with Parmesan cheese.

Bake in a 400 degree F oven about 30 minutes or until
topping is puffed and golden brown. Serve immediately.

Makes 8 servings.

Bacon strips keep these turkey burgers moist and tasty. Add a salad and you have an easy dinner with a gourmet twist.



Bacon-Wrapped Turkey Burgers

8 strips of bacon



1 pound ground turkey



1/2 cup dry bread crumbs



1 teaspoon Worcestershire sauce



1/2 teaspoon garlic salt



1/4 teaspoon ground black pepper



Preheat broiler.

Lay bacon on a baking

sheet and broil until beginning to brown, but still limp. Place

on paper towels to drain.

In a large bowl combine

together turkey, bread crumbs, Worcestershire sauce, garlic salt

and pepper.

Shape into 4 patties,

1/2-inch thick. Crisscross slices of bacon on each patty, tucking

the ends under and securing with toothpicks if necessary.

Broil 4 inches from the

heat until turkey is done, about 4 minutes on each side. Remove

toothpicks and serve on buns with desired condiments.



Makes 4 servings.

Turkey Burgers by Elizabeth Shatner
1 lb. ground turkey
1-2 chopped tomatoes
1/2 - 1 chopped avocado
1/2 - 1 chopped red onion (or onion of choice)
fresh herbs of choice: (3-4 tablespoons)
(dill, rosemary, cilantro, and basil)
2 tsp. horseradish mustard or powdered
chopped or crushed garlic to taste
garlic salt to taste
pepper to taste
1 tbsp. flavored olive oil: basil garlic or rosemary

Mix all ingredients in large mixing bowl. Mash/press together into patties. Grill in pan until fully cooked with 1 Tablespoon of olive oil with mushrooms, onions and pepper if desired (cook meat until there is no pink left). Garnish with grilled vegetables and a sprig of dill and serve with Dijon mustard. ** Great served with fresh salad and garlic-rosemary roasted potatoes.

Barbecue Biscuit Cups
8 oz. ground turkey or beef (90% lean)
1/4 c. chopped green pepper
1/4 c. minced onion
1 c. tomato sauce
1 tbsp. brown sugar replacement
1 tsp. prepared mustard
1/2 tsp. salt
1/8 tsp. pepper
1 can of 8 flaky biscuits
1 1/2 oz. shredded Cheddar cheese
Instructions
Preheat oven to 400 degrees. Brown ground meat, green pepper and onions in skillet sprayed with cooking spray. Add tomato sauce, brown sugar replacement, mustard, salt and pepper. Simmer 5 minutes. Place each biscuit in an ungreased muffin cup, pressing dough up sides to edge of cup. Spoon meat mixture into cups. Bake 10-15 minutes or until golden brown. Sprinkle with cheese and continue to bake until cheese melts. Serves 8.

Easy Blue Cheese Turkey Burger

Enjoy the great taste of turkey burgers with this easy recipe. As a bonus, the turkey burger is a good source protein.

1 pound ground turkey
3 tablespoons blue cheese
1 cup shredded lettuce
1/2 cup chopped tomato
Dash of freshly ground black pepper
Dash of salt


Divide turkey and shape into to patties. Cook turkey burgers in a skillet on medium heat for 2 to 3 minutes on each side or until turkey is cooked through. Topping with blue cheese and covering skillet with a led for the last minute of the cooking time to melt the blue cheese.
Cover serving plate with lettuce; top with turkey burger and tomato. Sprinkle with salt & pepper. Easy doubled.

Turkey Stuffed Green Peppers

1 Lb. Ground Turkey
½ Cup Instant Rice
½ Cup Carrots, grated
¼ Cup Onion, chopped
3 tablespoons parsley, chopped
1 to 2 cloves garlic, minced
1 tsp. Dried Oregano Leaves
½ tsp. Each Salt and Pepper
1 8 Oz. Can Tomato Sauce
2 Large Green Peppers

In a medium bowl combine turkey, rice, carrot, onion, parsley, garlic, oregano, salt, pepper and tomato sauce. Mix to blend thoroughly. Cut each pepper in half lengthwise. Remove and discard seeds and membranes. Divide turkey mixture between peppers. Place in a baking dish and cover. Bake in a preheated 350 degree F oven for about 1 hour, or until the internal temperature reaches 165 degrees F and the peppers are tender.
Servings: 4

Turkey Meatballs with Mushroom Sauce

Ease of preparation: easy

Prep Time: 15 minutes

Cook time: 10 minutes

Servings: 4-6



Wine pairing: White



Ingredients



1 pound ground turkey

2 slices sliced sandwich bread

1/4 cup milk

1 tablespoon fresh parsley, chopped

1/2 cup Parmigiano cheese, grated, divided

1 egg

salt to taste

freshly ground black pepper to taste

1 clove garlic

2 tablespoons extra virgin olive oil

1/4 cup flour

1 jar BARILLA Mushroom & Garlic Sauce

3 tablespoons half and half



SOAK the bread with milk. Drain, crumble and mix it with meat, Parmigiano cheese, parsley, salt, pepper and egg.

Make meat balls ½ inch diameter. SAUTE oil and garlic for two minutes in a large skillet. DUST the meatballs with

the flour, add to the skillet and brown over medium heat. ADD sauce, 1 cup of water and simmer 12 minutes and the

meatballs are completely cooked through. Stir in half and half and simmer two minutes before serving

Turkey Meat Loaf

Recipe from Ina Garten.



3 cups chopped yellow onions (2 large onions)

2 TB extra virgin olive oil

2 tsp. kosher salt

1 tsp. ground black pepper

1 tsp. fresh thyme leaves, or 1/2 tsp. dried

1/3 cup Worcestershire sauce

3/4 cup chicken stock

1-1/2 tsp. tomato paste

5 lb. ground turkey breast

1-1/2 cups plain dry bread crumbs

3 extra large eggs, beaten



Topping:

3/4 cup ketchup



Preheat oven to 325 º F.



In a medium sauté pan, over medium low heat, saute the onions, olive oil,

salt, pepper,

and thyme until translucent, but not browned, approximately 15 minutes.



Add the Worcestershire sauce, chicken stock, and tomato paste and mix well.



Allow to cool to room temperature.



Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large

bowl. Mix

well and shape into a rectangular loaf on an ungreased 10" x 15" jelly roll

sheet pan.



Spread the ketchup evenly on top.



Bake for 1-1/2 hours until the internal temperature is 160º F. and the meat

loaf

is cooked through. (A pan of hot water in the oven under the meat loaf will

keep the top

from cracking.) Serve hot, at room temperature, or cold in a sandwich.



Yield: 8 to 10 servings.

Turkey Meatballs

1 pound ground turkey 
1/2 cup dry bread crumbs
2 tbsps. finely chopped onion 
1/2 tsp. prepared horseradish
1 egg
3 drops hot pepper sauce 
1/2 tsp. salt 
1/2 tsp. pepper
2 tbsps. oil

Sauce:
1 cup ketchup
3/4 cup water 
1/4 cup brown sugar 
1/4 cup vinegar
1 tbsp. minced onion
1 tsp. dry mustard
2 tsps. WOR sauce
3 drops hot pepper sauce

Combine all meatball ingredients, except oil. Mix well. Shape into 20 balls and brown them in oil. Combine all sauce ingredients. Pour over meatballs. Cover and simmer 15 minutes. Serve over hot rice.

Crunchy Turkey Loaf

2 lbs. ground turkey
1 med. onion, chopped 
3/4 cup quick oatmeal
1 med. green pepper chopped
3 tbsps. light soy sauce (low in salt)
1/3 cup light ketchup
2 eggs or egg substitute 
1/4 cup skim milk
1&1/2  tsps. salt (optional)
pepper to taste 
1/2 cup water chestnuts

Preheat oven to 375°. Combine and blend all ingredients well. Shape in 12x6" loaf. Place on cooking rack in shallow dish. Bake 1 hour.
