Orange Broiled Shark Steak 1 lb. fresh or frozen shark steaks 1/4 c. orange juice 2 T. catsup 2 T. salad oil 1 T. soy sauce 1 T. lemon juice 1/4 t. pepper 1 T. sesame seed, toasted
Thaw fish if frozen, cut shark meat into 1" thick steaks. In bowl, combine orange juice, catsup, salad oil, soy sauce, lemon juice and pepper. Pour mixture over steaks in shallow dish.
Cover and refrigerate for 2 hrs. Drain fish, reserving marinade. Place steaks in greased shallow baking dish and broil 4" from heat, until fish flakes easily when tested w/fork. allow 5 min. for each 1/2" thickness. Baste occasionally w/ marinade. If steaks are more than 1" thick, turn fish over when 1/2 done. Brush again w/marinade, sprinkle w/sesame seeds.
