Wheaties Cookies

1 cup shortening

1 cup white sugar

2 eggs, well beaten

1 tsp. soda

1 tsp. salt

1 tsp vanilla

2 cups plain flour

2 cups each, oatmeal (quick), chocolate chips and Wheaties (Total works too)

Cream shortening and sugars; add eggs and beat well.  Add vanilla and mix until smooth.  Sift flour, soda and salt together and add to first mixture.  Blend oats, cereal and chocolate chips into dough.  Raisins, nuts, coconut are optional (I add pecans only�?don’t like raisins and coconut!).  Dough will be very dry.  Drop by spoonfuls on greased baking sheet.  Bake at 350 degrees for 12-15 minutes.  It is easy to overcook these cookies, so try the lower time first.

This recipe came from my mom, Betsy Humphries, and is a family favorite.  I like them better than regular Toll House Chocolate Chip cookies.  They are crunchy and delicious!
