Apple Pecan Bread Pudding
1 cup pecans; chopped, toasted
3 eggs
8 slices raisin bread; cubed
2 cups half & half
2 medium apples; peeled, thinly sliced
1/4 cup bourbon or brandy
1 cup sugar
1/4 cup melted butter
1 tsp. cinnamon
1/2 tsp. nutmeg
Place bread cubes in greased crockpot. Add sliced apples and pecans over
bread cubes. Toss lightly. Mix sugar, cinnamon, nutmeg and eggs together.
Stir in half 'n half and bourbon. Pour mixture into crockpot; drizzle with
butter. Cover and cook on LOW for 3 1/2 to 4 1/2 hours until apples are
tender. Turn off heat. Let stand 15 minutes.
Note: Serve warm with vanilla ice cream or frozen yogurt, if desired.
