Pork Chop Scallop
6 to 8 poik loin or rib chops (1/2 to 3/4 inch thick)
1 teaspoon salt
2 cups water
2 medium carrots, thinly sliced (about 1 cup)
1 package 9 oz) frozen green beans (can use a couple cans of beans)
2 tablespoons margarine or butter
1 package (5.25 oz) scalloped potato mix
   - - - (I just use 4 or 5 large potatoes)
1 can (10 3/4 oz) condensed cream of celery soup
2/3 cup milk
1/2 teaspoon dried basil leaves
1/2 teaspoon Worcestershire sauce
 
Heat oven to 350. Trim excess fat from pork chops. Rub skillet with fat trimmed from pork. Cook pork chops in skillet until brown; sprinkle with salt. Heat water to boiling in 3-quart saucepan. Add carrots, potatoes, and green beans (if frozen - if canned wait and add them later); heat to boiling. Stir in margarine and scalloped potato mix if using -
Mix soup, milk basil and Worcestershire sauce; stir into vegetable mixture. Pour into ungreased rectangular baking dish, 13x9x2 inches. Place pork chops on top. Cover and bake 45 minuts.
Uncover and bake until pork chops are done, 10 to 15 minutes. Let stand 5 minutes before serving - YUMMY - 6 servings
