Hash Brown Casserole Ingredients 3 tablespoon vegetable oil 1 bag (2 pounds) frozen hash browns 1 onion, chopped 1 green bell pepper, chopped 1 cup cubed ham 10 eggs, beaten Salt and pepper 1 cup shredded cheddar cheese Directions Heat oil in a large skillet. Add hash browns, onions and green peppers. Cook until potatoes begin to brown. Spray a 13x9 baking dish with vegetable oil spray. Spread potato mixture in pan; top with ham. Pour eggs over mixture and season with salt and pepper. Gently stir to coat all ingredients with egg. Sprinkle with shredded cheese. Cover with foil and refrigerate overnight. Bake, covered, at 375 for 25 minutes.
