Asian Chicken Salad Recipe 3 cups shredded Napa cabbage 1 cup shredded red cabbage 1/4 cup red peppers -- julienned 1/4 cup carrot -- julienned 1 tablespoon sliced green onions 2 cooked chicken breast halves -- without skin 1/2 cup Spicy Peanut Dressing -- (see recipe) 1 sprig cilantro Thinly slice chicken breast on a bias. Place all ingredients except cilantro leaves in a mixing bowl and toss. Garnish with cilantro leaves. Yield: Makes 2 servings Each with: 508 calories; 34 g fat; 35 g protein; 18 g carbohydrate; 6 g dietary fiber; 12 g usable carbs.
