Debbi's Microwave Peanut Brittle

All the cooking is done in the microwave, then just pour it onto a cookie sheet, let it cool, break it off and eat it."

1 cup white sugar
1/2 cup light corn syrup
1 cup salted peanuts
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

1.     Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
2.     Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.
 
**Tip:  spray the cookie sheet, then put parchment paper on top of that, then spray again (it isn't really necessary to spray the parchment top, but i do just to make sure the brittle comes off clean.  i've tried buttering pans like some recipes suggest, but it always sticks.) then, pour brittle over it.  it will not stick at all.  and you can reuse the parchment for a few batches.

Debbi's Hot Pizza Dip Appetizer

1 (8 ounce) package cream cheese, softened (i use 1/3 less fat kind)
1/4 tsp garlic powder
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 cup pizza sauce
2 tablespoons chopped mushrooms
2 tablespoons sliced black olives

In a small bowl, mix together the cream cheese and garlic powder.  Spread mixture in the bottom of a 9 inch pie plate, or a shallow microwave-safe dish. Sprinkle 1/2 cup of the mozzarella cheese and 1/2 cup of the Parmesan cheese on top of the cream cheese mixture. Spread the pizza sauce over all. Sprinkle with remaining cheese, then top with mushrooms and olive slices (or pizza toppings of your choice, pepperoni, feta, roasted red peppers, etc.)  Cover with plastic wrap, and microwave for 5 minutes, or until hot.  Serve hot.  I use those mini bruschetta's or sliced italian loaf to dip with.

halloween fun:

Sewer Surprise

1/2 cup lime jell-O

Whipped Topping or Whipped Cream

Chocolate Chips

Waffle, Toasted

With a serving glass, cut a toasted waffle to the size of the top of the glass by turning a glass upside down on top of the waffle and twisting.

Mix up 1 pkg. of lime gelatin as directed on pkg. but do not refrigerate.  Blend 1/2 cup of lime gelatin with 1/2 cup of whip topping and pour into serving glass.

Sprinkle chocolate chips on top or mix them in with the jello and whip topping.  Place waffle on top for the manhole cover and serve.

'Stuffed' Cabbage Casserole

1 small-medium cabbage (chopped)�?.you can also use any pre chopped slaw mix
1 pound 98% lean ground beef
1 chopped onion
1 cup uncooked instant rice
1 jar (32 ounce) Marinara sauce
1 cup water (or 99% FF Swanson beef broth)

Brown beef and onion, drain. Set aside. Put chopped cabbage in a 9X13 pan. Sprinkle with garlic salt and pepper. Sprinkle with rice. Put browned beef and onion on top of cabbage and rice. Top with Marinara sauce. Pour water over all. Cover and bake at 375* for 1 hour. Let stand for 15 minutes before serving.

Makes 6 LARGE servings
 
i have not tried this, it is supposed to be a slimmed down version of cabbage rolls.

Microwave Pumpkin Butter
Makes about 2 Cups

1/4 cup dark brown sugar, packed
2 Tbs sugar
1/4 cup water
1/2 tsp allspice
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1/2 tsp cinnamon
1-1/2 cups pumpkin

Mix the two sugars, water, allspice, ginger, cloves, nutmet, and cinnamon in a 4 cup glass measure. Microwave on High 3 minutes; stir. Add pumpkin a microwave on High for 5 minutes. Let cool and refrigerate. Keeps several weeks in refrigerator or can be frozen. Use as you would apple butter.

11 calories per serving, 0 fat, 0 fiber per 1 T serving

this sounds good...kinda like a cherry limeade...juiced up with vodka
The "Frog" is actually lime wheels that are only slightly blended with the other ingredients, creating the idea of an old witches brew with pieces and parts floating in it. Add a few berries, grapes or apple slices for the look of even more unknown creature bodies inside your brew. The trick is to avoid blending until smooth as you normally would, only enough to chop things up and mix them together a bit.


Frog In A Blender

    * 1 cup of ice
    * 2 oz vodka
    * 4 oz cranberry juice
    * 2 lime wheels

Preparation:

   1. Place all the ingredients in a blender (including the lime wheels).
   2. Blend for 3-5 seconds (ingredients will not be completely blended).
   3. Pour into a chilled glass

Deb that cocktail sounds yummy.  I just added Cranberry juice to the grocery list so we can give it a try.  Here is a cake recipe I tried yesterday.  It was so easy to make and really good. I think next time I will use a little more powdered sugar though with the root beer for the glaze.  It seemed a little thin but tasted really good.
 
 
ROOT BEER CAKE

Ingredients:
1 box (18.25 oz.)  YELLOW CAKE MIX
1 can (12 oz.)  ROOT BEER
1/4 cup  CANOLA OIL
3  EGGS
1/2 cup POWDERED SUGAR
3 Tablespoons ROOT BEER SODA

Directions:
1. Heat oven to 350°F. Grease and flour a 10-inch Bundt pan; set aside.

2. Combine the cake mix, can of root beer, oil and eggs in a medium bowl. Mix the cake batter according to the package directions, pour into the prepared pan and bake for 35 to 40 minutes, until a toothpick inserted in center comes out clean.

3. Cool cake 15 minutes in pan before inverting onto a wire rack to cool. Poke holes in the cake every 2 inches with a bamboo or metal skewer.

4. Combine the powder sugar and the 3 Tablespoons Root Beer in a small bowl. Beat the sugar glaze with a fork until smooth. Pour the root beer glaze over the cake.

oh yum!  it sounds like a rootbeer float in cake form!  i am going to try it, and maybe make it into cupcakes for my neice and nephew for halloween.  oooo, maybe with a little spider web design on top, that would be cute!

Slime Dessert

Cherry Jell-O
Lime Jell-O
whipped cream
M&Ms

Directions:
Make equal quanities of cherry and lime jello. When set, mash each color up seperately.
Place alternate layers of slimy gelatin into large bowl. Top with "eyeballs" of whipped cream blobs and place M&Ms in the center.
