Enchilda Lasagna Casserole
2 pounds hamburger
1 medium onion, chopped
2 med or large cloves og garlic, minced
2 teaspoons chile powder
2 teaspoon cumin
1 teaspoon corrinder
1 teaspoon cilintro
salt and pepper to taste
2 cans refried beans
2 cans Mexican style diced tomatoes
1 can regular diced tomatoes
four tortillas
Ricotta cheese
2 pounds shredded Mexican cheese
2 small cans minced black olives or 1 large can black olives diced
Brown hamburger, onion and garlic and spices. Drain off grease. add refried beans and tomatoes, blend.
in a baking pan place a layer or flour tortillas. Top with sauce mixture, add ricotta cheese, top with shredded cheese followed by scattering the olives. Repeat layers until last layer. For lat layer add sauce, shredded cheese and top with olives. Bake in a 350 degree preheated oven for 30 to 45 mins.
Serve with fresh diced tomatoes, green onions and sour cream.
