Mud Cake Ice Cream
Ingredients: 1 scoop of chocolate ice cream (or your favorite) 1 piece chocolate cake
Method: Put scoop of ice cream in desert dish Allow to soften, but not melt Stir rapidly Add the piece of chocolate cake Stir again to break up the piece of cake, but leave large chunks for the pieces of mud. Serves 1.

Chocolate Pudding Serves 6 This pudding's creamy texture remains irresistible to kids of all ages. And when made with the freshest cream, best vanilla extract, and finest chocolate, it's heaven.
6 tablespoons sugar 3 tablespoons cornstarch 1 1/2 tablespoons cocoa powder 1 pinch of salt 2 1/4 cups heavy cream 1 1/4 cups milk 1 teaspoon pure vanilla extract 6 ounces best-quality semisweet chocolate, finely chopped 1 1/2 tablespoons unsalted butter, cut into small pieces
1. In a medium saucepan, whisk together sugar, cornstarch, cocoa, and salt. In a 4-cup measuring cup, combine 1 1/4 cups heavy cream with milk and vanilla. Whisk 1 cup cream mixture into dry ingredients until cornstarch is completely dissolved. Whisk in remaining cream mixture until smooth.
2. Place saucepan over medium heat. Cook, whisking constantly, until mixture comes to a boil and thickens, about 4 to 5 minutes. Add chocolate, and cook, whisking until chocolate is melted, about 1 minute. Remove from heat, and whisk in butter until melted. Using a 3-ounce ladle, pour pudding into six dessert cups. Refrigerate until completely set, about 1 hour.
3. Whip remaining cup of heavy cream to soft peaks, and serve with the pudding.

Dirt Pudding recipe I made this recipe the other day and the whole family loved it. I would have to say this is one of the best desserts I have had in a while. As for "forced" changes, I used chocolate pudding because I couldn't get any vanilla. I also added 1 teaspoon vanilla extract to the cream cheese and powdered sugar mixture. Lastly, I used coarsely crushed Oreo cookies instead of the finely ground. I was thinking that, next time, I may add a bit of cold mocha coffee to my mixture if I make this recipe with chocolate pudding again. Also, I'd like to try making the recipe with coarsely crushed Nutter Butter Peanut Butter cookies. Thanks for another awesome recipe. Cream together and set aside: 1/4 cup margarine 8 ounces cream cheese 1 cup powdered sugar 3 1/2 cups milk 2 (6 ounce) packages French vanilla pudding 1 (12 ounce) Cool Whip Beat milk and pudding 2 minutes with mixer. Fold in Cool Whip. Combine with cream cheese mixture. Crush 20 ounce packages of Oreo cookie in blender or food processor, a few at a time until the consistency of dirt. Use a clean flower pot to serve. (I bought a brand new new plastic one that looks like clay, along with a new plastic trowel which I use for ONLY this purpose). Place 1/4 of cookie mixture in pot, then 1/3 of pudding mixture. Keep layering this until you end with "dirt" on top. Refrigerate. Put a few silk flowers in center, add some gummy worms "crawling" out of the pot!
Serve with a trowel. | |

Chocolate Covered Bananas
6 medium bananas 1 cup chocolate chips 2 Tbls. margarine 12 wooden popsicle sticks 1/2 cup finely ground pecans
Peel the bananas and cut in half. Insert a wooden stick into the small end and place on waxed paper-lined cookie sheet. Freeze for 2 or 3 hours, or until hard.
In the top of a double boiler over simmering water, melt the chocolate chips and margarine, stirring until smooth.
Dip the frozen bananas into the chocolate and roll in the pecans. Freeze until the chocolate is hard.
Serve or wrap in plastic wrap and freeze until serving.

Frozen Apple Sauce and Fruit Cup 1 cup chunky or regular apple sauce 10 oz. package frozen strawberries, thawed 11 oz. can mandarin orange segments, drained 1 cup grapes, if desired 2 tablespoons orange juice concentrate
In medium bowl, combine all ingredients. Spoon fruit mixture into individual dishes or paper cups. Freeze until firm. Remove from freezer about 30 minutes before serving. 7 (1/2 cup) servings. | |
