Chicken Fajitas - Lindah
(using sandwich maker)
Makes 12 pockets

1 lb Chicken Breast; boneless and skinless

Sauce
1/2 cup Soy Sauce
1 cup Orange Juice
1 Tbsp Lemon Juice
1 tsp Sugar
2 Cloves Garlic; crushed
1/2 tsp Ginger

1 Tbsp Oil
1 medium Onion; sliced
1 Green pepper; sliced
1 Red Pepper; sliced
12 Flour Tortillas (6-8 inch)

Cut chicken breasts into strips 1/4-inch thick. Combine all sauce
ingredients and pour over chicken strips. Cover and refrigerate overnight.
Drain meat well and stir fry in oil along with onion and peppers until all
pink color is gone from chicken pieces and vegetables are crisp-tender.

Preheat sandwich maker. Trim sides from tortillas to form squares 5 X 5 or 6
X 6 inches. Brush outside of each with oil. Lay 4 tortillas on pocket grid
oiled side down. Spoon chicken mixture into the triangle shaped pockets. Top
with tortillas, oiled side up. Close lid and cook 3 minutes or until
tortillas are heated through and sealed. Repeat with remaining ingredients.

Sandwich Maker Breakfast - Lindah

Scrambled Eggs
Ham, cooked and sliced,
Sausage links
Cooked Crumbled Bacon
Smoked Sausage
Almost any meat that you like..

I generally use just white bread buttering both sides and cooking until done usually about 4 to 5 minutes.
It's a great easy breakfast on the run, especially if you have leftover meat or scramble the eggs the night before.
For my OAMC cooking I'll make about 24 of these and freeze in ziploc bags for an easy snack.
Less than 2 minutes in the microwave and they are done, easy enough even for the littlest people..

Hot Pastrami Pockets - Lindah

2 slices rye bread
2 to 3 slices of pastrami
1 to 2 tblsp sauerkraut
1 slice swiss cheese
1 tblsp Thousand Island dressing
butter or margarine

Butter 2 slices of bread on 1 side.  Place one slice, (butter side down) on one side of the sandwich toaster.
Add pastrami, sauerkraut, dressing and the cheese.
Cover with the second slice of bread, (butter side up).
Close and lock the lid.
Cook approximately 3 minutes or until desired browness is reached. Let cool for a couple of minutes and enjoy.

Cheesy Hot Dog Pockets - Lindah

Sliced Bread (any variety)
Hot Dogs
Individually wrapped cheese slices
Ketchup
Butter

Butter one side of two pieces of bread. Place the slice of bread, butter side down on the sandwich toaster.
Spread 1 or 2 tblsp of ketchup on the bread.
Cut half of a hot dog into 1/4 inch coins. Place hot dog coins over the ketchup.
Unwrap a slice of cheese and place over the hot dogs.
Cover with remaining slice of bread butter side up.
Close and lock lid.
Cook for approximately 3 minutes.
Little kids love this recipe.

Gyros - Lindah

1/2 pound ground beef -cooked, crumbled
1/2 pound ground lamb  cooked, crumbled
1 teaspoon Italian seasoning
1 teaspoon oregano
1/2 teaspoon garlic powder
salt and pepper -- to taste
1/3 cup Cucumber Yogurt Sauce

Mix all ingredients together; let sit for about 5 minutes
Fill each sandwich with 3-4 tablespoons of the mixture. 
Use for wrapper pita (split and cut to fit machine), pizza dough, or whole wheat bread. 
Spread outside of wrapper with olive oil seasoned with oregano, optional.
Cook for about 3 minutes until done

Cheese-Steak - Lindah

1/4 tsp Olive oil 
1/4 tsp Oregano 
2 slices Steak  cooked and thinly  sliced
1 slice American cheese  or Swiss Cheese
1 tbsp  Sauteed onions-optional
2 tspb Sauteed mushrooms-optional
Salt and pepper -- to taste
White, Italian or whole wheat bread; pizza dough

Coat inside of bread  with oil seasoned with oregano. 
Layer remaining ingredients and season. 
Coat outside of bread with seasoned olive oil.
Cook for 3 to 5 minutes depending on desired brownness.
Tastes great served with fried onions and mushrooms on top.

Beef Pot Pie Sandwiches - Lindah

 

2 cans beef gravy
2 C ground beef -- browned
1 can peas
1 can sliced carrots -- chopped
1 small onion -- chopped
Wrapper: Bread

In a heavy saucepan put all the ingredients. Cooked until heated through.
Place 1 - 2 tablespoons into bread and cook in Sandwich Maker for about 4 minutes.
Great for those cold winter days, with a pot of hearty soup,
or even as an appetizer.
Men seems to love these, and they are great when they micro-waved the next day, great for work.

Hobo Hamburgers - Lindah

2 tablespoons ground beef cooked and crumbled
Optional Ingredients
1 slice cheddar cheese -- or 1-2Tbsp grated cheddar cheese
1 tablespoon cooked and crumbled bacon
1 tablespoon crumbled blue-cheese 
1/2 teaspoon diced onion
1 Mushrooms -- thinly sliced, up
1 1/2 Tsp crushed pineapple
1 Pickle slices -- up to 2 
Bread- whole wheat, cracked wheat, multi grain, white, or oatmeal

Spread choice of "spread" on inside of bread. Fill sandwich with ground meat and your choice of remaining ingredients. Cook for 3 to 5 minutes and enjoy..
A great way to use up leftovers and very easy to accommodate those who have different tastes in burgers.

Waffled Reuben Sandwich - Lindah 
(waffle iron or sandwich maker)

Yield: 6 Servings

12 slice rye bread
3 tbsp prepared mustard
6 tbsp sauerkraut
12 slices corned beef (1 lb)
12 slices Swiss cheese (approx 3/4 lb)
6 tbsp butter

On each of 6 slices of the bread, spread 1/2 Tbsp mustard; top with 1 Tbsp sauerkraut on each. Arrange 2 slices of corned beef and 2 slices of Swiss cheese on each; top with remaining slices of bread.

Butter outside of each sandwich; using 1/4 Tbsp of butter; grill until cheese begins to melt.

NOTE: Use either Waffle or sandwich grill.

VARIATION: Substitute dairy sour cream flavored to taste with chili sauce and prepared horseradish sauce for the mustard.

Corned Beef + Cheese - Lindah 

4 slices white or whole wheat bread
softened butter
4 slices American cheese
sliced corned beef
honey mustard, or plain yellow mustard

Butter one side of each slice of bread.
Lay 2 into the bottom section of the sandwich maker.
Place a slice of cheese on top of each.
Then a a slice of corned beef.
Spread a little mustard on and then add another slice of cheese.
Place the other 2 slices of bread, butter side up, on top.
Bring the cover down and cook until golden brown.
Makes 2 servings.

Chocolate Nut Delight - Lindah

1/2 tablespoons Nutella -- (chocolate and
 hazelnut spread),
1 1/2 tablespoons marshmallow cream 
1 1/2 tablespoons chopped almonds  
White or Raisin cinnamon Bread

Mix ingredients together until well blended and fill wrapper. Cook for about 3 minutes.
Nice and Gooey after dinner treat.

For a chocolate banana snack substitute mashed banana for the marshmallow cream

Sandwich Maker Apple Pie Lindah

1 1/2 tablespoons cream -- or  - evaporated skim milk
1 1/2 tsp Flour 
1 teaspoon cinnamon
1 1/2 teaspoons sugar 
1 pinch Salt
Thin apple slices  about 1/4 apple

WRAPPER- Pie crust; puff pastry; raisin or nut bread -will need more filling for pie-crust and puff pastry to make a nice "full" pie.

Mix together first five ingredients and pour over the apples.
Cook for about 4 minutes or until browned nicely.

Sandwich Maker Carrot Cake - Lindah

1/2 cup  Grated carrot
1/4 cup Vegetable oil
1 Egg
1/2 cup  Sugar
1/2 tsp Cinnamon
1/3 tsp  Baking soda
1/2 cup Self-rising flour
1/4 cup Oats -- regular or quick
2 tblsp  Chopped walnuts-optional

Beat together carrot, oil, and egg. Add sugar, cinnamon, baking soda, flour, and oats; mix well. 
Add walnuts. Spoon batter onto grids until full but not overflowing.  Bake for approximately 5-7 minutes, checking
often for doneness.
Great for those times when you have a craving for cake but a full one would be too much
I love to make this for unexpected guest who drop in and let them think it took me forever to make. :-)

3 Provolone slices

½ lb. Deli ham

½ lb. Deli turkey breast

1 T. Milk

1 T. Oil

1 c. bread crumbs

Spread bread with mustard and layer on cheeses & meats; combine
egg, milk, oil & dip sandwiches on both sides; dredge in crumbs;
grill in sandwich maker or waffle iron sprayed with PAM for 3-5
min. or till browned & crisp.

For each sandwich:



2 6 inch packaged corn tortillas

1 heaping tblsp cheese dip

1 tblsp salsa

2 tbsp refried beans



Spray grids with nonstick cooking spray.

Spread cheese, salsa, and beans on one corn tortilla.

Cover with another corn tortilla.

Place on one side of the sandwich toaster. Close and lock lid.

Cook approximately 5 minutes or until lightly browned.

Let cool and enjoy..

This is quite popular with the teen crowd especially for a

snack for their never ending appetites.
