CAMPFIRE HASH

2 tbsp cooking oil
1 large onion, chopped
2 garlic cloves, minced
4 large potatoes, peeled and cubed
1 lb smoked sausage, cubed
1 can chopped green chiles, 4 oz.
1 can whole kernel corn, drained

In a Dutch Oven, heat oil. Saute onion and garlic until tender.

Add potatoes. Cook uncovered, over medium heat for 20 minutes, stirring occasionally.

Add sausage, cook and stir until potatoes are tender and well browned, about 10 minutes more.

Stir in chilies and corn; cook until heated through.

Bob's Meaty Camp Sausage Gravy

Recipe Ingredients:
For 7 People
Used for supper on seventh evening in camp

  • 3Lb Sausage cooked still hot
  • Pack sausage in Tupper ware and cover with hot grease (We used the new ZIP LOCK throw away tub and burned it.)
  • In a small Zip bag +1/4 TSP Black pepper
  • +1/4 TSP Mrs. Dash +1/4 TSP Morton Seasoning Salt
  • Bag with 2 cups flower (Did not use all)
  • Bag with 2 cups powdered milk (Did not use all)

Cooking instructions:
At Camp keep it out of sun. Put sausage in skillet heat and remove 1/2 grease. Add 3/4 of milk and flower stir into sausage and grease. Lower heat and add water to desired thickness. Add small Zip bag with pepper. Completely mix before raising heat and bringing to a boil. If it is to thin add more flour and milk. Good over rice, potatoes, breads, eggs, ect.

 One Pan Meal
  • Eckrich Smoked Sausage
  • Boil 'n Bag Rice
  • Corn on Cob
  • Baby Carrots
  • Butter

Directions:
In large pot or dutch oven, fill with water, bring to a boil, drop in Eckrich sausage cut into 4 inch pieces, drop in corn on cod, baby carrots and bag of rice. In approx. 10-15 min. you have a complete meal in one pot.

Comments:
Pull out rice and divide onto plates, top with sausage, carrots, corn and butter. This is so quick and easy when you have a lot of people who are tired and hungry. It is so feeling too and clean up is as easy as emptying the pan of water!

BROILED BEEF STRIPS



4 pounds chuck steaks cut to 1/8�?BR>


1/4 cup lime juice



1/2 teaspoon salt



Light a fire of mesquite wood or mesquite charcoal and allow it to burn to coals.



About 20 minutes before coals are ready brush the meat with lime juice and sprinkle on salt.



Place meat over coals and cook for 5 minutes then turn and cook another 5 minutes.



Repeat process until fat is well cooked and charred and meat is tender.



Serve meat on a warm flour tortilla with salsa.

Camper's Stew
1 lb. hamburger
1 lg. can Campbell's vegetable soup
1 onion, chopped
2 carrots, thinly sliced
2 stalks celery, thinly sliced
Steamed rice
Instructions
Sauté chopped onion. Add hamburger and fry until browned. Add carrots and celery. Then add vegetable soup. Cook until heated through. Serve over steamed rice.

Brush squares of aluminum foil with butter and add diced vegetables to

the packet. Top vegetables with lots of garlic, butter, salt and

pepper. Fold foil to seal the packet. Place on coals. Turn packets

occasionally to prevent burning. Takes about 1/2 hour depending on heat

of fire.

High Energy Snack Mix
   
 

Ingredients:
1 cup Barley-Rolled Flakes 
1 cup Oats, Rolled, Regular Old Fashioned 
1/2 cup Coconut, Shredded 
1/2 cup unsalted Almonds (Whole Shelled) 
1/2 cup Wheat Germ 
1/2 cup Sunflower Seeds (Roasted and Salted) 
1/2 cup Raisins (Unsulfured) 
1/2 cup Honey 
1/4 cup Light Corn Syrup 
1/4 cup Vegetable Oil 
1 tsp. Vanilla Extract 
1 tsp. Almond Extract 

Preheat oven to 325°F. In a large bowl, stir together first seven ingredients. In a medium bowl, use medium speed of an electric mixer to beat remaining ingredients until well blended. Pour honey mixture over dry ingredients, stirring until well coated. Spread evenly on a greased baking sheet. Bake 20 to 25 minutes or until brown. Cool completely in pan. Break into pieces. Store in an airtight container.

Makes about 5 1/2 cups snack mix. Makes 12 servings.

Food for Hobo Hike

4 cn Tuna (3 oz each)
4 cn Baked beans (6 oz each)
4 Oranges
4 Plastic forks or spoons
4 Bandana cloths
4 Children

Place 1 can tuna, 1 can beans, 1 orange, and 1 fork on each banadana. Bring up corners and tie securely. Tie end to children's belt loop or attach to a stick and send them off on their hobo hike. Pack another hobo pouch for yourself and go along. Make sure someone has a Scout knife with a can opener attachment to open cans (much more fun struggling with one of these things than to take a conventional can opener). The oranges serve as both a drink and a dessert. Poke a hole in one end and after all the juice has been sucked out, open it and eat the flesh. The tuna and beans, of course, are eaten just as they come from the can. The bandanas serve as little tablecloths, napkins, and kerchiefs to be worn back home. Children love this hobo picnic--it's easy for you, nutritious, filling, and fun from them.

Dutch Oven Biscuits

40 biscuits in a 10"
60 biscuits in a 12"
80 biscuits in a 14"
120 biscuits in a 16'

Buy refrigerator tube biscuits. The kind you whop on the counter to open.
Flakey Biscuits work best. Grease the Dutch Oven with Crisco or you can use
Pam or your favorite Spray. Open Biscuits and stand them on their edge,
starting around the outside of the Dutch Oven, making a ring all around the
outside of the oven. Then makek another ring of biscuits inside that one,
filling the Center in last. Rub a little butter or your favorite spread
over the Top of Biscuits before cooking (a good garlic spread is a real
winner). Remember to Rotate Lid & Bottom of oven often to keep from
burning. Bake at 350 degrees, using (for a 12-inch oven) 15 coals on top
and 9 under the oven. It takes about 45 minutes to bake, give or take a few
minutes. Pass them out. It's a pretty cheap way to entertain a crowd or
please your guests.

Here's a breakfast tip to try with the biscuits:
Melt a stick of butter and add a can of frozen orange juice concentrate
(thawed). Stir it until the mixture is smooth, then add teaspoon of
Cinnamon. Next add 2 cups of powdered sugar. Stir till everything is
blended well, now add a 1/2 cup of chopped pecans and pour this mixture over
the biscuits when they are done. I always pull the sides loose and make
sure some of this OJ glaze drips down to the bottom.

Caramel S'Mores

9 whole honey graham crackers
1 milk chocolate candy bar
12 large marshmallows
1/2 cup caramel sauce

Light a campfire and collect 6 thin green sticks, at least 2 feet long, to use as skewers. Break each graham cracker in half to make a total of 18 squares. Separate chocolate bar into 12 rectangles.

Let each camper make his/her own s'more: Set 3 graham cracker squares on a plate near the fire. Top 2 of the crackers with a piece of chocolate. Have caramel sauce nearby.

Skewer 2 marshmallows onto each stick. Toast marshmallows over hot coals until golden brown on the outside and soft in the center.

Set each toasted marshmallow on a chocolate-topped graham cracker.

Spoon a little caramel sauce over each marshmallow. Stack one topped cracker on top of the other, then top those with a third cracker. Eat immediately.

Makes 6 s'mores, for 6 servings.

Great Outdoors Potatoes
6 Potatoes
1/4 c Olive oil
2 ts Lemon juice
1 ts Dijon mustard
1/2 ts Corriander
1/2 ts Fresh ground peppper
1 ts Minced onion
1 Pureed garlic clove
1 ts Paprika

Scrub potatoes and cut into quarters, keeping skins on. Boil until
tender, and coat them with the dressing which you can prepare in
advance. Wrap the potato quarters in tin foil, and place on coals to
brown. Delicious with meat or fish.

Campfire Beans

This recipe brings back memories of that scene in "Blazing Saddles" when they are eating beans around the campfire. You'll need a big pot or Dutch oven, and you can simmer your beans over a camp stove, next to the campfire, or on a grill.



INGREDIENTS:



1-2 pounds ground beef

1 onion, chopped

1 medium carrot, chopped

1 stalk celery, chopped

1/2 teaspoon minced garlic

2 tablespoons chili powder

1 15-ounce can tomato sauce

1 15-ounce can diced tomatoes

1 8-ounce can butter beans

1 15-ounce can chick peas

1 15-ounce can kidney beans

1 24-ounce can great northern beans

3 cups water

salt and pepper, to taste

corn bread



PREPARATION:

Brown hamburger and drain grease. Add all ingredients into a large pot, bring to a simmer, and cook for about one hour stirring frequently. Salt and pepper to taste, top with some fresh chopped onion, and serve with corn bread.

You can make the corn bread ahead of time at home. When you get to the campground you can wrap it in foil and warm it up on the grill or next to the campfire.

Servings: 8-10

Preparation time: 1 hour 30 minutes

Applesauce Doughnuts

Ingredients:

large strips of foil

1 dozen large cinnamon sugar doughnuts

1 jar applesauce



Slice the doughnuts in half like a sandwich and pour about 1/2 cup applesauce on one half of the doughnut and then place the other half on top. Wrap up completely in the foil and then heat in the coals for 10-15 minutes. (Campfire should be burned down to just hot coals.) Open the foil packet and enjoy!

Mozzarella (or cheese of choice)

Any other toppings of your choice

On a heavy piece of tin foil, put down the pats of butter. Then a layer of potatoes. Put down some sauce and cheese and your toppings. Continue to make layers until all is used. Fold up and close one end. Add about 1/4 Cup of water and seal other end. Let cook over campfire grill for about 30 minutes.

Pita Bread (optional)

Zipper type freezer bag



Put 1-2 eggs in bag and add desired amount of milk. Add the additional ingredients. Seal bag tightly. Place bag in boiling water and cook for 3-5 minutes until desired doneness. To eat as a breakfast sandwich, put egg combination in pita bread.
