No Bake Cranberry Coconut Bars



1/2 cup butter

1/2 cup brown sugar

1 1/2 cup quick rolled oats

1/4 cup light corn syrup

1/2 cup dried cranberries

1/2 cup sweetened flaked coconut

1/2 cup walnut pieces



Place butter in an 8-inch square, microwave-safe

baking dish.

Microwave until the butter is melted.

Stir in the brown sugar until dissolved. Stir in the

rest of the ingredients. Press the mixture firmly into

the dish.



Microwave for three to five minutes or until lightly

browned. If your microwave does not have a rotating

carousel, rotate the dish twice during cooking.

Let the cookies cool and then cut them into bars with

a sharp knife. Wrap them individually to pack in a lunch box.

Savory Beef and Cheese Roll-Ups
 
1 pound thinly sliced deli roast beef

2 packages (6 ounces each) garden vegetable-flavored soft spreadable cheese

4 flour tortillas (10-inch diameter)

1 cup shredded carrots

1 cup shredded Monterey Jack cheese

8 leaves leaf lettuce

Carrot curls (optional)

Spread soft cheese evenly on one side of each tortilla. Top evenly with shredded carrots and Jack cheese. Layer lettuce and deli roast beef evenly on cheese, leaving 1/2-inch border around edge. Roll up tightly; wrap in plastic wrap. Refrigerate 30 minutes before serving.

To serve, unwrap and cut each roll in half. Garnish with carrot curls, if desired.

Makes 4 servings.

Tip: Roll-ups may be prepared ahead of time; wrap and refrigerate up to 8 hours before serving.

Fruity Peanut Butter Spread Recipe

1 medium apple, quartered but not peeled

1/2 C. dried cherries or dried cranberries

1 C. peanut butter

1/4 C. orange juice

1/2 t. cinnamon

In a food processor, chop apple and cranberries.

In a small bowl, combine peanut butter, orange juice and cinnamon.

Stir apple and cranberry mixture into peanut butter mixture until combined.

Cover and refrigerate.

Makes about 1 1/2 cups.

Peanut Butter Roll Ups


4-5 T. peanut butter

4 slices bread

Honey or jam

Remove crusts from bread. Place the bread on a hard surface and roll it flat with a rolling pin.

Spread a thin layer of peanut butter on the flattened bread with a knife. Spread some jam or drizzle some honey on top of the peanut butter.

Roll each piece of bread from the bottom up, jellyroll-style. Slice roll into 1-inch pieces and insert toothpicks to hold the roll-ups in place.

Makes 4 servings.

Bologna Boat

1 t. mustard

1 slice bologna

1 slice American cheese

1 hot dog bun

Spread the mustard onto the slice of bologna. Top with a slice of cheese and roll them together. Place the roll in the hot dog bun and wrap it in aluminum foil.

Makes 1 serving.

Peanut Butter and Jelly Muffins
 
2-1/2 C. flour
3/4 C. sugar
1 1/2 T. baking powder
1 t. salt
2/3 C. crunchy peanut butter
3/4 C. milk
1/3 C. vegetable oil
2 eggs
1 jar strawberry or grape jelly (10 oz.)
non-stick cooking spray

Spray 12 muffin cups with non-stick cooking spray.

In a large mixing bowl, mix together flour, sugar, baking powder, and salt. Using a pastry blender or two knives, cut the peanut butter into the flour until the mixture resembles coarse crumbs. Add milk,, vegetable oil, and eggs; stir until just moistened.

Spoon muffin cups 1/2 full with batter. Create a well in the center of each cup. Place about 1 1/2 tablespoon of jam into each well. Spoon remaining batter over jelly.

Bake at 400° F. for 20 to 25 minutes, or until a wooden pick inserted in the center comes out clean. Cool on a wire rack.

Caramel Crunchies

1 C. butter

2/3 C. sugar

1 1/2 C. flour

3 C. apple cinnamon toasted oats cereal

1/2 t. baking soda

1/8 t. salt

1 C. chopped pecans

16 caramels

1/4 C. milk

Heat oven to 350° F. Grease a 9-by-13-inch baking pan. Set aside.

Combine butter, sugar, flour, cereal, baking soda and salt. Beat with a mixer set on low speed until well-combined. Press into baking pan. Sprinkle with pecans, pressing them lightly into the batter. Bake 20 to 25 minutes, or until lightly browned.

Meanwhile, in a double boiler, melt caramels and milk. When bars are removed, drizzle with caramel mixture.

Makes about 24 cookies.

Peanut Butter Teddy Bear Sandwich

Spread peanut butter on one slice of bread. Drizzle with honey and top with the second slice. Use the bear cookie cutter to cut a bear from the center of the Sandwich; press on raisins to make the eyes and nose.

Memphis City Schools Carrot Cake

1 C. sugar

3/4 C. oil

1 1/2 C. grated carrots

1 C. flour

2 eggs

1/2 C. raisins, chopped

1 t. soda

1 t. cinnamon

1 t. baking powder

Beat eggs into sugar, one at a time. Mix dry ingredients. Add oil to dry ingredients and mix with eggs and sugar. Add carrots.

Pour into greased and floured cake pan. Bake 25 minutes at 350° F.

Serves 12.

Note: Bake these as cupcakes for easier packing.

Great Granola!


Add crunch and fiber to your kid's lunch by including a bag of this nutty snack mix. This granola also makes a great after-school treat, especially when blended in with vanilla yogurt.

1/4 cup butter

1/3 cup firmly packed brown sugar

2 1/2 cups uncooked, rolled oats

1/4 cup slivered almonds

1/4 cup chopped walnuts

1/2 cup raisins

1/3 cup chopped dates

1/3 cup chopped dried apricots

1/3 cup chocolate chips

Preheat the oven to 350 degrees. Melt the butter in a 15-by-10-inch jelly roll pan.

Stir in the brown sugar until combined, then stir in the oats, almonds, and walnuts. Spread the mixture in an even layer in the pan.

Bake the granola for 12 to 15 minutes or until it is golden brown, stirring twice during the baking process. Transfer the pan to a wire rack and cool.

When the mixture is completely cool, stir in the raisins, dates, apricots, and chocolate chips. Store it in an airtight container.

Makes about 5 1/2 cups.

Spicy Pear Muffins 
 

4 pears (about 2 lbs.), peeled, cored and diced

1 C. sugar

1/2 C. vegetable oil

2  eggs, beaten

2 t. vanilla

2 C. flour

2 t. baking soda

2 t. cinnamon

1 t. nutmeg

1 t. salt

1 C. raisins

1 C. chopped walnuts

Preheat oven to 325° F. Prepare 18 muffin cups.

Mix pears and sugar in medium bowl. Blend oil, eggs, and vanilla in large bowl. Combine flour, baking soda, cinnamon, nutmeg, and salt in another medium bowl.

Stir pear mixture into egg mixture; mix in dry ingredients. Fold in raisins and walnuts; do not overmix.

Divide batter among cups. Bake 25 - 30 minutes at 325° F.

Super Sub

1 medium hero roll

4 to 6 slices of thinly cut cheese and/or luncheon meats

4 thin tomato slices

1/2 C. shredded lettuce

2 t. vegetable oil

2 t. red wine vinegar

Salt and pepper to taste

Slice the hero roll in half lengthwise and scoop out some of the soft bread inside. Line both sides of the roll with your child's favorite cheese and luncheon meat. Top with the tomato slices and shredded lettuce. Sprinkle the surface evenly with the oil and vinegar and season with salt and pepper and any special additions. Close up the sandwich, then cut it in half and wrap it in plastic wrap or aluminum foil.

Makes 1 large sandwich.

Individual Cheese Balls

"With their creamy, nutty flavor, these small cheese balls work great in

a lunch box," says Mildred Sherrer of Bay City, Texas. "It's a fun idea

that really hits the spot when you're hungry."



INGREDIENTS

2 packages (8 ounces each) cream cheese, softened



1 cup (4 ounces) shredded cheddar cheese



1 to 2 tablespoons chopped onion



1 to 2 tablespoons chopped fresh parsley



1 to 2 teaspoons lemon juice



1 to 2 teaspoons Worcestershire sauce



1-1/2 to 2 cups ground walnuts



PREP 15 min.

TOTAL 15 min.



DIRECTIONS

In a small bowl, combine the first six ingredients; mix well. Shape into

1-1/2-inch balls. Roll in nuts. Chill thoroughly. Serve with crackers.

Yield: 20 servings.

LUNCH-BOX "HANDWICHES"

1 pound Loaf frozen bread dough
Thawed
2 1/2 cups Fully cooked ham -- finely
Chopped
4 ounces Shredded Swiss cheese
1 Egg yolk
1 tablespoon Water

Allow dough to rise according to package directions.

Punch down; divide into 10 equal pieces.
Roll each piece into a 5"
circle. Place about 1/4 cup ham and 2 Tbsp. cheese on each circle; press
filling to flatten.

Mix egg yolk and water; brush on edges of circles.

Fold into semicircles and pinch edges to seal. Brush tops with egg yolk
mixture. Place on an ungreased baking sheet. Bake at 375 degrees for 15-20
minutes or until golden brown. Serve warm or cold. If desired, cool and
freeze.

California Roll Up



1 whole wheat flour tortilla

4 slices deli shaved turkey breast

1 slice mozzarella cheese

4 thin slices cucumber

4 slices avocado

alfalfa sprouts



Layer tortilla with turkey breast, cheese, cucumber and avocado slices, and

a handful of sprouts. Roll it up and slice in half. Wrap tightly in plastic

wrap. Perfect for school lunches.
