Turkey Lasagna (microwave)

1 lb. ground turkey
1 clove garlic, chopped
1 cup onions, chopped
1 (14 1/2-oz.) can tomatoes, chopped, reserve liquid
1 (6-oz.) can tomato paste
2 1/2 tsp. Italian seasoning or oregano
8 uncooked lasagna noodles
1 (12-oz.) carton cottage cheese
2 cups mozzarella cheese, shredded (8-ozs.)

In 2-qt microwave-safe casserole dish, combine ground turkey, garlic and onion; cover. Microwave at 100% power (High) for 5 minutes, stirring halfway through cooking time.

Stir in tomatoes, including juice, tomato paste and seasoning. Microwave, uncovered, at 100% power (High) for 5 minutes.

Lightly grease 2-qt oblong microwave-safe casserole dish. Spoon 1/3 sauce (about 1 1/3 cups) over bottom of dish. Top with 4 lasagna noodles. Spoon cottage cheese over noodles. Sprinkle mozzarella over top of cottage cheese. Spoon 1/3 more sauce over cheese; top with remaining noodles. Spoon remaining sauce over noodles and cover with vented plastic wrap.

Place several layers of paper toweling in bottom of microwave to absorb any spillovers.

Microwave at 100% power (High) for 5 minutes. Reduce power to 50% (Medium); microwave 20-25 minutes or until noodles are tender.

Serves 8.

Microwave Lasagna

1 pound ground beef
1 15 1/2 ounce jar spaghetti sauce
1 8 ounce can tomato sauce
1 tablespoon parsley flakes
1 teaspoon oregano leaves
1 16 ounce carton cottage cheese
1/4 cup grated Parmesan cheese
1 egg
1 tablespoon parsley flakes
1 teaspoon basil leaves
8 uncooked lasagna noodles
8 ounces Mozzarella cheese, shredded
3 tablespoons grated Parmesan cheese
1/4 cup water, rinse sauce jar with this

Crumble beef into 1 1/2 quart casserole. Cover loosely and microwave on high for 3 minutes; break up and stir. Cover and microwave until very little pink remains; 2 to 3 minutes longer; drain. Stir in spaghetti sauce, tomato sauce, 1 tablespoon parsley flakes and oregano. Cover tightly and microwave on high to boiling, 3 to 4 minutes. Mix cottage cheese, 1/4 cup Parmesan cheese, egg, 1 tablespoon parsley flakes and the basil in a small bowl. Spread 1 1/2 cup meat sauce in a 12 x 7 1/2 x 2 inch baking dish. Overlap 4 lasagna noodles on sauce. Add 1 cup cheese filling and 1 cup Mozzarella cheese; reserve 1 cup Mozzarella cheese for top after cooking. Repeat layers with 1 1/3 cup meat sauce, remaining noodles and cheese filling. Top with remaining meat sauce. Cover tightly and microwave on high 10 minutes; rotate baking dish half turn during this time. Microwave on medium until noodles are tender, 22 to 28 minutes longer. Sprinkle remaining Mozzarella cheese and 3 tablespoons Parmesan cheese on top. Cover and let stand 10 minutes. 22 minutes is the time for 700 watt oven; a lesser watt oven will take the longer time. Serves 6 to 8.

1 (7 oz.) pkg. Spaghetti
1/4 c. butter
4 oz. mushrooms (fresh or canned and drained)
1 sm. onion, chopped
1 1/2 tsp. lemon juice
1/3 c. flour
1 tbsp. Salt
1/2 tsp. Paprika
1/8 tsp. Nutmeg
2 c. turkey or chicken broth
1/2 c. half & half
2 c. leftover, cubed turkey
1/2 c. Parmesan cheese
Paprika

Cook spaghetti using directions on packet. Drain well. Place in greased 8x12x2 inch dish. In 2-quart casserole, place butter, mushrooms, onion and lemon juice. Microwave at high 2 to 3 minutes, stirring after 1 minute. Stir in flour, salt, paprika and nutmeg until smooth; microwave at high 1 minute. Stir well. Gradually stir in broth. Microwave at high 5 to 6 minutes, stirring after 3 minutes until thickened. Mix in half & half and turkey. Pour over spaghetti. Sprinkle with cheese and paprika. Microwave at high 7 to 9 minutes, rotating dish half turn after 4 minutes until hot. Makes 4 to 6 servings; can be halved.

Cheesy Rotini & Tuna

1 3/4 C. Rotini uncooked

2 cans (4 oz) tuna, drained

1 (16 oz)pkg. frozen broccoli thawed & drained

1/4 lb. Velveeta cubed

1/2 C. sour cream

1/4 t. pepper

Cook pasta. Meanwhile mix remaining ingredients in 2 qt. microwaveable bowl. Microwave on high 2 minutes. Stir and microwave another minute or until heated through. Drain pasta and add tuna mixture. Mix.

8 oz. elbow macaroni

3/4 lb. cheddar cheese

1 cup milk

1/8 tsp. dry mustard

1/2 tsp salt

1/4 tsp. onion powder

1/4 tsp. pepper

bread crumbs, buttered



Cook and drain noodles. Cut cheese into cubes. In 3 qt. casserole,

combine noodles, cheese, milk, salt, onion, pepper, mustard. Cook,

covered, at HIGH 10 - 12 minutes; stir twice. Top with bread crumbs,

cook uncovered, at HIGH, 3-5 minutes.

MICROWAVE FETTUCINE ALFREDO

(4 servings)



8 oz. medium egg noodles

1 cup Parmesan cheese

1/2 cup heavy cream

pepper to taste

1/2 cup butter



Grate cheese. Cut butter into quarters. Cook noodles. While noodles

are standing, in glass serving bowl, combine cheese, butter and

cream. Cook at MEDIUM 3 - 4 minutes or until butter melts. Stir

twice. Stir in drained noodles, toss well. Season with pepper.
