Hawaiian Bread Pudding

6 slices French bread, broken up
1/2 cup flaked coconut
2 eggs
2 cups milk
2 tablespoons rum, optional
Small crushed pineapple
1/2 cup chopped pecans
1 cup sugar
1/8 lb margarine
Place bread in microwave bowl. Mix in pineapple, coconut and
pecans. Set aside. Beat eggs and sugar together; set aside. Heat
milk and margarine on high in microwave for 3-1/2 minutes,
remove and add rum. Dish beaten eggs and sugar into milk mixture
then pour over bread mixture and mix well. Put in microwave and
cook for 4-1/2 minutes on high. Set for 5 to 10 minutes then
serve with favorite sauce or as is.

Serves 8

Raspberry Crumble

3/4 cup butter or margarine
1 cup packed brown sugar
1 3/4 cups all-purpose flour
1 1/2 cups quick-cooking oats
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup raspberry jam

Place butter in a 2-qt. microwave-safe bowl. Heat, uncovered, at 50% power for 30-45 seconds or until softened. Add brown sugar; stir until creamy. Add flour, oats, vanilla, salt and baking soda; mix well.

Pat half of the mixture into a greased 8-in. square microwave-safe dish. Microwave, uncovered, at 70% power for 5-6 minutes or until mixture sets, rotating a half turn after 3 minutes. (Crust will be uneven.)

Spread with jam. Sprinkle with remaining dough; press down lightly. Cook, uncovered, at 70% power for 4-5 minutes or until set, rotating a half turn after 2 minutes. Serve warm with vanilla ice cream.

Yield: 9-12 servings.

Microwave Apple Crisp

Make a classic, favorite apple dessert even quicker when you cook with a microwave.



Prep Time:15 min

Start to Finish:25 min

Makes:6 servings



4 medium tart cooking apples, peeled, sliced (4 cups)

2/3 cup packed brown sugar

2/3 cup quick-cooking or old-fashioned oats

1/2 cup Original Bisquick® mix

3 tablespoons butter or margarine, softened

3/4 teaspoon ground cinnamon

3/4 teaspoon ground nutmeg



1.

In ungreased 2-quart microwavable casserole or 8-inch square microwavable

dish, arrange apple slices. In small bowl, stir remaining ingredients until

crumbly.

Sprinkle over apples.

2.

Microwave uncovered on High 7 to 10 minutes, rotating dish 1/2 turn after 5

minutes, until apples are tender. Serve warm.

High Altitude (3500-6500 ft): No change.

PUMPKIN CHEESECAKE

Crust
1/4 cup butter or margarine
1 cup graham cracker crumbs
2 tablespoons sugar

Filling
2 pks 8oz cream cheese
1 cup canned pumpkin
4 eggs
2/3 cup sugar
1 teaspoon imitation brandy extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger

Topping
1/2 cup sour cream
2 Tablespoons powder sugar
1/4 teaspoon imitation brandy extract

In a 9in round baking dish, microwave butter at High for 1 1/4 to 1 1/2 min, or until melted. Stir in graham cracker crumbs and sugar. Mix well. Press Mixture firmly against bottom of dish. Microwave at High for 1 1/2 to 2 min. or until set roating dish once. Set aside

In 8-cup measure,microwave cream cheese at 50% to 21/4 to 4 min. Add remaining filling ingredients. Beat at medium speed of electric mixture until well blended. Microwave at High for 4 to 5 min. or until mixture is very hot and starts to set,beating with whisk every 2 min.

Pour filling over prepared crust/ Place dish on saucer in microwave oven. Microwave at 50% for 7 to 15 min. or until center is almost set. rotation dish twice.(filling becomes firm as it cools.) chill 1 hour

In a small mixing bowl, combine topping ingredients. Stir until smooth. Spread topping over cheesecake. Refrigerate at least 8  hours or overnight.

GRAND MARNIER STRAWBERRIES DIPPED IN CHOCOLATE

Best served in a bubble bath with chilled champagne, but after
a fine meal is acceptable.

12 each fresh strawberries
1 1/2 ounces Grand Marnier
4 ounces white chocolate
4 ounces milk chocolate

Quickly rinse the berries in cold water, pat dry with a towel
and place in a bowl. Pour the Grand Marnier over the top and
let stand for 20 minutes.
Put the white chocolate in a soup cup and microwave for 30-40
seconds. Test the chocolate with a fork to see how melted it is.
Chocolate will hold its shape even when melted. Stir briskly
with a fork. If it is still lumpy, microwave in 10 second
increments until smooth.
Dip berries on one side only and place on waxed paper covered
plate. Chill for 10 minutes. Repeat with milk chocolate,
dipping the other side. Chill.

BERRY CHEESECAKE

1/4 c. butter or margarine
1 c. graham cracker crumbs
2 tbsp. sugar

FILLING:
2 pkg. (8 oz. each) cream cheese
2/3 c. sugar
1/4 tsp. salt
1/3 c. milk
2 tbsp. lemon juice
4 eggs
1 c. cherry pie filling

Microwave butter in 9 inch round baking dish 45-60 seconds, or until melted. Stir in crumbs and 2 tablespoons sugar. Press firmly in bottom of dish. Microwave at high 1 1/2 minutes, rotating after 1 minute. Place cream cheese in bowl. Microwave at 50 percent (medium) 1 minute, or until softened. Add sugar, salt and milk; beat well. Blend in juice and eggs. Microwave at high 4-7 minutes, or until very hot, stirring well every 2 minutes. Pour over crust.

Microwave at 50 percent (medium) 7-15 minutes, or until almost set in the center; rotate 1/4 turn every 3 minutes. Mixture firms up as it chills. Let cool, spread cherry filling over cheesecake. Refrigerate at least 8 hours or overnight. Or serve with one of the toppings, below.

Makes 8 servings.

Sour Cream: Cool cheesecake 20-30 minutes, then spread 1 cup dairy sour cream.

Fresh Fruit: After chilled, top cheesecake with 1 to 2 fresh strawberries, raspberries, blueberries or sliced peaches.

Glaze:Combine 1/3 cup apricot, raspberry, or other preserves and 1 tablespoon lemon juice.

Drizzle over cheesecake before chilling.

Graham cracker crust

Place cream cheese in medium bowl. Microwave at 50% until softened (1-2 minutes). Add remaining  ingredients. Beat at medium speed of electric mixer until smooth and well blended.

Microwave at 70% until hot and thickened (6-8 minutes); stirring every 2 minutes. Pour into graham cracker crust. Microwave at 50% until filling is firm to the touch (10-15 minutes). Center may appear soft set. Garnish with pecan halves, if desired. Refrigerate until set.

1/4 c. sugar

Nutmeg or cinnamon   

Put milk in 1 quart bowl. Add eggs, sugar, salt and vanilla. Beat with electric mixer until smooth. Pour into five 6 oz. custard cups. Sprinkle with nutmeg or cinnamon. Arrange cups in circle in microwave oven. Cook on simmer (50% power) for 9 to 12 minutes. Remove each cup as it begins to bubble, and is almost set in center. Let stand for 5 minutes before serving. Serve warm or cold.

Banana S'mores

1 firm Banana, sliced
12 graham cracker squares
6 large marshmallows
1 bar (1.55 oz.) milk chocolate candy

Top 6 graham crackers with chocolate squares. Arrange 4 banana slices on each of 6 graham cracker squares.

Toast marshmallows over fire.

Lay 2 toasted marshmallows on the graham square. Top with remaining graham crackers.

Repeat to make additional s'mores.

To Microwave:

Arrange 4 banana slices on each of 6 graham cracker squares. Top with marshmallow. Microwave 12 to 15 seconds or until puffed.

Place 2 squares chocolate on remaining 6 graham crackers. Microwave 1 minute or until just soft. Put halves together to make sandwich.

Makes 6 servings
