Microwave Corn Bread

1 1/4 cup all-purpose flour
3/4 cup corn meal
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/4 cup vegetable oil
1 egg, beaten

Combine dry ingredients. Stir in milk, oil and egg and mix just until dry ingredients are moistened. Pour batter into ungreased 9 inch pie plate or round microwaveable cake pan. Microwave at HIGH 5-6 minutes, or until surface appears dry, rotating pan after 2-3 minutes. Let stand 5 minutes before serving.

ENGLISH MUFFIN BREAD

2 pkg. yeast
5 c. flour, divided
1 tbsp. sugar
2 tsp. salt
2 c. milk
1/4 tsp. baking soda
1/2 c. water
Cornmeal

Combine 3 cups flour, yeast, sugar, salt and soda. Heat liquids
until very warm. Add to dry mix; beat well. Stir in 2 cups flour to
make stiff batter. Spoon into two 8 x 1/2 x 4 1/2 inch bread pans
that are greased and sprinkled with cornmeal. Cover; let rise in
warm place 45 minutes. Microwave each loaf on high power for 6
minutes, 30 seconds. Surface of loaf will be flat and pale in color.
Allow to rest 5 minutes before removing from pans. Slice.

Makes delicious toast.

Boston Brown Bread 

1 1/4 c Whole wheat flour
1 1/4 c Corn meal
1 1/4 c Rye flour
1 ts Baking soda
1/2 ts Salt
2 1/2 c Buttermilk
1 c Dark molasses
1 c Raisins

Sift together the dry ingredients in a large mixing bowl. Add the buttermilk, molasses and raisins. Mix by hand until well blended. Divide the mixture into 2 parts. Place each in a waxed paper lined baking dish that are 10 x 6 x 1-3/4. Cover each with a plastic wrap. Microwave one loaf at a time on medium (50%) for 22 - 24 minutes. Turn dish a half turn halfway through cooking. Remove plastic wrap. Place on a solid surface for about 10 minutes before removing from baking dish.

Makes 2 loaves.

Beer Bread 

2 c Self-rising Flour
1 c Flour
3 tb Sugar
12 oz Beer
1 tb Butter; softened
Cornflake Crumbs

Mix together all ingredients. Spray a glass loaf pan with cooking spray; sprinkle bottom and sides with crumbs. Spoon batter into pan and top with butter and a light sprinkling of cornflake crumbs. Microwave on MEDIUM for 9 minutes, then on HIGH for 2 minutes.

Southern Cheese Spoon Bread 

1/2 c Yellow cornmeal
1/2 ts Salt
2 Eggs; beaten
2 tb Margarine
1 c Diced American cheese
2 c Milk

In a medium glass bowl, combine cornmeal, milk, and salt. Cook on High for 3 minutes and at medium-high for 3 to 4 minutes, or until cornmeal is thickened, stir twice. Stir until smooth, add eggs, cheese, and butter. Stir until cheese and butter are almost melted. Pour into greased 8 inch round dish, cover with wax paper. Cook at medium 12 to 14 minutes, or until center is almost set. Let stand 10 minutes before serving.

Makes 6 servings.

Sprinkle bottom of microwave dish with corn meal. Place dough into dish. Microwave at 50% one minute; then let stand 10 minutes. Repeat two more times. Microwave on high 4-6 minutes.

1977 French Bread Italian from Best of the Best Country Woman Magazine

4 Eggs

1 Cup Milk

¼ Cup Grated Romano Cheese

1 tsp. Salt

3 Drops Tabasco Sauce

French Bread, 1 day old

1 Lb. Bulk Italian Sausage

Basil and Parsley

15 ½ Oz. Jar Spaghetti Sauce with Mushrooms

½ Lb. Mozzarella Cheese, sliced or shredded

In a small bowl, beat eggs with rotary beater. Add milk, Romano cheese, salt and Tabasco. Grease 12 x 8 inch baking dish. Cut French bread in half to fit into baking dish. Using only half of the bread, cut lengthwise and lay open in dish. Pour milk mixture over bread and allow to soak at least ½ hour. Layer sausage over bread. Cook in a 500- watt microwave 10 minutes on high. Sprinkle with basil and parsley, then pour spaghetti sauce over all. Cover with Mozzarella cheese. Microwave 6 to 8 minutes. Let stand 5 minutes before cutting. Serves about 6.

Corn Muffins

Ingredients

Directions

    In a small bowl stir together flour, 3 T yellow cornmeal, sugar, baking powder and salt.

    Make a well in the center of the dry ingredients.

    Stir together beaten egg yolk, milk and melted butter.

    Add all at once to the dry ingredients, stirring just till moistened.

    Line two 6-ounce custard cups with paper baking cups.

    Fill cups 2/3rds full.

    Sprinkle a little additional cornmeal atop muffins.

    Micro-cook, uncovered, on 100% power about 45 seconds or till done, rearranging once. (When done, the surface may appear moist but a wooden pick inserted near the center should come out clean.).
