Ingredients 8 large flour tortillas 2 cups pepper jack cheese, shredded -- if you can't find pepper jack, plain monterey jack will work too 1 cup black beans, rinsed and drained 1 cup tomatoes, chopped and drained 1/2 cup chopped green onion salt and pepper
Preheat oven to 375 degrees and prepare a sheet pan lined with foil.
Lay 4 of the tortillas down on the sheet pan. Divide one cup of the cheese among all 4 of the tortillas. Divide the black beans, tomatoes and green onions in the same way. Salt and pepper each one lightly. Top each tortilla with the remaining cheese and finish by topping each one with a tortilla. Press down lightly on each quesadilla.
Bake them for 7 minutes. Remove from the oven, and being VERY careful not to let the fillings come out, flip them with a wide spatula. Return to the oven for 7 more minutes.
Cut each quesadilla into quarters and serve with guacamole and your favorites salsa!
