Fun Taco Cups

INGREDIENTS:
1 pound ground beef
1 (1.25 ounce) package TACO BELL HOME ORIGINALS Taco Seasoning Mix
1 (10 ounce) can refrigerated buttermilk biscuits
1/2 cup KRAFT Shredded Cheddar Cheese



DIRECTIONS:
Brown meat; drain. Add Seasoning Mix; prepare as directed on package.
Press biscuits onto bottoms and up sides of medium muffin pan. Fill biscuits
with seasoned meat.
Bake at 400 degrees F for 15 minutes. Sprinkle with cheese. Bake an
additional 2 to 3 minutes or until cheese is melted. Serve with Taco Bell
Home Originals Thick 'N Chunky Salsa, if desired.

Pepper Jack Quesadillas
Kay-sah-dee-ya!

Serves 4

Ingredients
8 large flour tortillas
2 cups pepper jack cheese, shredded -- if you can't find pepper jack, plain monterey jack will work too
1 cup black beans, rinsed and drained
1 cup tomatoes, chopped and drained
1/2 cup chopped green onion
salt and pepper

Preheat oven to 375 degrees and prepare a sheet pan lined with foil.

Lay 4 of the tortillas down on the sheet pan. Divide one cup of the cheese among all 4 of the tortillas. Divide the black beans, tomatoes and green onions in the same way. Salt and pepper each one lightly. Top each tortilla with the remaining cheese and finish by topping each one with a tortilla. Press down lightly on each quesadilla.

Bake them for 7 minutes. Remove from the oven, and being VERY careful not to let the fillings come out, flip them with a wide spatula. Return to the oven for 7 more minutes.

Cut each quesadilla into quarters and serve with guacamole and your favorites salsa!

Beef and Cheese Burritos

Quick and easy and the kids will love it!



1-1/2 lb. ground beef

1-1/4 cups prepared mild thick and chunky salsa

1/2 lb. Velveeta Cheese, cut into 3/4" dice

8 flour tortillas (approximately 8 inches)

Thinly sliced lettuce

Chopped tomato

Ripe olive slices



In large nonstick skillet, brown ground beef over medium heat 8 to 10 minutes

or

until beef is no longer pink.



Pour off drippings. Stir in salsa and Velveeta cheese. Heat until cheese is

melted.



To serve, spoon 1/3 cup beef mixture in center of each tortilla. Fold bottom

edge up

over filling.



Fold sides to center, overlapping edges.



Top with lettuce, tomato and olive slices as desired.



Serves: 4.



Note: I like to serve with sour cream and guacamole too.

Crispy Bacon Tortilla



one tortilla

4 pieces of bacon

4 slices of American cheese



Cook 4 pieces of bacon in microwave (or in frypan - kids, have parents fry

for you). Put the tortilla on a plate and add cheese. Put in microwave for

20 secounds to melt. Then put bacon on the chese and roll your tortilla up.

Add salsa, avocado, or sour cream.

Avocado Sauce



Ingredients:

1 avocado, diced

6 tablespoons salsa

2 tablespoons sour cream



Directions:

Stir together all ingredients and serve.



Note: From corn chips to tacos, this creamy sauce is quick, easy, and kid-friendly. Have kids scoop and dice the avocado

and measure the salsa with tablespoons-<WBR>and then heap it upon your favorite Mexican dish!



This recipe for Avocado Sauce serves/makes 3/4 cup
