Kid-Friendly Fish



2 tbsp reduced-fat mayonnaise

1/2 tsp salt

1/4 tsp pepper

1 lb catfish (or any firm white fish)

2 cups crushed crisp rice cereal



Heat oven to 400 degrees F. Coat a baking sheet with cooking spray. In a bowl, combine mayonnaise, salt and pepper.



Cut fish into chunks, and toss with mayonnaise mixture to coat. Dredge in cereal and place on baking sheet. Spray with vegetable cooking spray, and bake 20 minutes. Serve with ketchup. Makes 4 servings.

Tuna Wiggle

4 cups (approx.) dry egg noodles
2 cans tuna, drained and shredded
1 can cream of mushroom soup (any cream soup will work)
1 cup (approx.) peas (canned or frozen), drained of liquid
3/4 soup can milk
potato chips, crushed

Cook noodles as directed on package; drain. Mix rest of
ingredients except potato chips in large baking dish and blend
well. Crush potato chips and spread on top of casserole. Bake at
325 degrees until casserole begins to bubble.

Baked Fish with Cornflake Coating
Makes 4 servings

1 pound fish Fillets
1/4 cup lemon juice
1 teaspoon pepper
2 cup cornflakes, crushed into 1/3 cup crumbs

Wash and dry fillets and cut into serving size pieces (3-4 ounces). Pour lemon juice into shallow bowl. Add fish and let marinate in juice for 15 minutes. Drain fish. Coat with cornflake crumbs. Arrange in one layer in baking dish sprayed with nonstick spray. Bake for 10 minutes in 475 degree oven without turning.

Tuna Tacos



1 large can of tuna

2 tablespoons cole slaw dressing

1 package cole slaw mix

12 flour tortillas



In a medium bowl mix the tuna, cole slaw mix and cole slaw dressing. Spoon

into flour tortillas. Serve with corn chips and salsa.
