Orange Pineapple Crush

Ingredients:

4 fresh pineapple slices
3/4 cup plus 2 Tbs. orange juice
1-3/4 cups diet lemon-lime soda pop

   
Instructions:

Chop the pineapple and process in a blender or food processor for a few seconds until it is well crushed. Mix together the orange juice and lemon-lime soda. Divide the crushed pineapple between 4 glasses and top with the juice mixture.

Serve chilled.

Yield: 4 servings

2 cups strawberries
1 cup skim milk
1 cup plain nonfat yogurt
1/2 cup orange juice
8 ice cubes


Instructions:

In a blender puree the strawberries, milk, yogurt and orange juice. Add the ice and blend until the ice is coarsely chopped. Serve in chilled glasses.

Coffee Latte

Ingredients:

1-1/4 cups regular grind espresso or other dark roast coffee 
1 cinnamon stick, broken into pieces 
6 cups water 
2-1/2 teaspoons EQUAL® FOR RECIPES or SPLENDA 
2-1/2 cups skim milk 
Ground cinnamon or nutmeg 


Instructions:

Place espresso and cinnamon stick in filter basket of drip coffee pot; brew coffee with water. Stir sugar into coffee; pour into 8 mugs or cups. 

Heat milk in small saucepan until steaming. Blend half of milk in blender at high speed until foamy, about 15 seconds; pour milk into 4 mugs of coffee, spooning foam on top. Repeat with remaining milk and coffee. Sprinkle with cinnamon or nutmeg before serving.

Everything but the Kitchen Sink Smoothie

Serves 1 or 2, Cal 333, , Fat 4.2 g, Carbs 57, Protein 11.2, WW 5 (2.5 if 2 serves)

2 bananas

1 orange

1 apple

2 chunks of fresh pineapple

2 kiwis

1-2 cups of frozen blueberries

10-12 frozen strawberries

1- 2 cups cranberry juice

1 (14 ounces) can light condensed milk (not evaporated milk)

1(8 ounces) carton plain yogurt

1 small banana, cut up

1 cup frozen or fresh whole strawberries

1(8 ounces)can crushed pineapple packed with juice,chilled

2 tablespoons real lemon juice from concentrate

1cup ice cubes

Halved fresh strawberries, optional

In a blender container, combine the low fat yogurt, banana, wholestrawberries, pineapple with its juice and real lemon, cover and blend until smooth. With blender running, gradually add ice cubes, blending until smooth.

Garnish with halved strawberries if desired. Serve immediately.

1cup milk

1 packet instant oat meal,regular flavor

1 whole banana, cut in chunks

1 cup orange juice

Combine all ingredients in a blender. Cover and blend on high speed for1 minute.

Tip: Substitute skim milk for milk to reduce the fat and points.

1 tablespoon coconut milk

Tip: substitute the coconut milk for coconut essence (twice the flavour, zero fat).

Frozen Watermelon Virgin Margaritas

4 cups watermelon chunks, seeds removed
6 tablespoons fresh lime juice
2 tablespoons sugar
4 cups ice cubes
1/8 teaspoon table salt
1/2 lime, cut into wedges for garnish

Combine all ingredients, except lime wedges, in a blender; puree until smooth. Divide among 4 glasses. Garnish with lime wedges.

Serves 4.

1/2 cup fat free skim milk
1/4 teaspoon mint extract, optional
4 Reduced Fat Oreos, coarsely broken

Place yogurt, milk and mint extract in a blender and blend until smooth and creamy; add Oreos and blend for 5 seconds. Yields about 2/3 cup per serving.

Serves 4.
