Any good recipes for fresh veggies out there?  I'm looking for interesting combinations, seasonings and herbs, but as close to fresh as possible.

I did come up with a good "taco" salad.
Make a guacamole with one avacado, one peeled tomato, one green onion, some lime juice and a healthy amount of taco seasoning of choice.  Blend well in a blender.  Mix a small amount into a bowl of fresh greens to coat and top with a diced tomato.  A taco salad without the beef, cheese and chips.  Wasn't bad at all. lol
