MACARONI AND TOMATO CASSEROLE


Ingredients

2 lb Ground beef
      1 c  Onion; chopped
  1 1/2 c  Water
      1 clGarlic; minced
    1/4 c  Green pepper; chopped
      2 cn Tomatoes; chopped, 1lb ea
      1 c  Tomato juice
           Salt and pepper
    1/2 ts Oregano
      2 c  Macaroni; uncooked

Procedure

Brown the meat, onion, green pepper, garlic and drain. Combine
  tomatoes, juice and the drained meat mixture. Stir in the seasonings.
  Mix well and place in crockpot and cook low for 6 to 8 hours. Stir in
  uncooked macaroni and cook 2 to 3 hours more

Sausage & Mushroom Lasagne


Ingredients

12 Lasagne Noodles from 1 (16oz) pck
1 lb. Italian sausage, cut into 1/2" slices
1 lb. mushrooms trimmed and sliced
1 lrg. onion, chopped..about 12oz.
3 cloves garlic, minced
1 tsp. fennel seeds, crushed
1 jar (28oz)tomato-basil pasta sauce or your choice
1 cont. (32oz) Ricotta Cheese
2 c. shredded mozzarella about 8oz ...devided
1/2 c. grated parmesan Cheese
1 egg
2 Tbs. chopped fresh parsely

Procedure

Cook noodles. Preheat oven 375*.
In nonstick skillet cook sausage til no longer pink and brown. 3-4 minutes transfer to paper towels.
Discard all but 2 Tbs. drippings.
In same skillet cook mushrooms, onions, garlic , and fennel.....stirring til tender...6-8 minutes.
Stir in sauce and sausage , remove from heat.
Combine ricoota 1 c. mozarella, Parmesan, egg and parsely.
Spread 2/3 c sauce mix in bottom of 13x9 pan.
PLace 4 noodles over sauce; spread with 1/2 the cheese mixture.
Spread 2 c. sauce over cheese; top with 4 noodles.
top with remaining cheese mixture, then 2 c. sauce, Arrange remaining 4 noodles over sauce top with remaining sauce
Sprinkle with remaining Mozarella.
Cover with foil. Bake until top lightly browns, 5-10 minutes . Let stand 10 minutes before cutting.

Stove Top Mac-n-Cheese


Ingredients

1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded

Procedure

In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.

Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Tex-Mex Mac 'n Cheese


Ingredients

1 pck. (24oz.) Velveeta Shells & Cheese
1/3 c. salsa from a jar
3/4 tsp. dried oregano
1/2 tsp. ground cumin
1/2 c. shredded Cheddar Cheese

Procedure

Preheat oven to 375*.
Cook pasta shells according to the directionson the pck.
drain and return to pan.
Stir in cheese packet from pck., salsa, oregano and cumin.
Spoon into 6 cup casserole dish.
sprinkle with Cheddar cheese.
Bake 10-15 minutes or til cheese melts and starts to turn Golden brown
