1 mild onion, peeled, quartered lengthways and finley sliced
2 courgettes (zucchini), halved and sliced
1 red or orange bell pepper, coursely sliced
2 cloves garlic, smashed
3 oz mushrooms, sliced
2 large eggs, beaten
1/4 pt double cream
6 oz strong cheese (cheddar or a mix of cheddar, stilton, whatever), grated
pinch paprika
salt and freshly ground black pepper to taste

Fry the onion, courgettes and pepper to lightly colour, add garlic and mushrooms and stir, in a little olive oil - all in a wok and transfer to a deep 2pt dish. Add seasoning to taste. Place half the cheese on the top.
Lightly beat the eggs and add the cream and a splash of cold water, season, add paprika and pour over the vegetables and cheese in the dish. Top with the remaining cheese and grate some fresh nutmeg over the surface.
Place on the middle shelf in a moderate oven and bake till set (about half an hour).
Great on its own with salad and bread, or as an accompaniment to meat dishes.
